  Strawberry Flowers

  32 medium strawberries
  8 oz cream cheese -- softened
  3 oz cream cheese -- softened
  3 tablespoons powdered sugar
  1/4 teaspoon almond extract
  2 tablespoons semisweet chocolate -- grated

 Cut a thin slice from the stem end of each strawberry, allowing the berries to stand upright. Place berries, cut side down, on a serving platter. Cut each berry into 4 wedges, cutting to, not through, bottoms. Fan wedges slightly; set aside.

Combine cream cheese, sugar, and almond extract in a mixing bowl. Beat at medium speed of an electric mixer until light and fluffy. Fold in grated chocolate. Spoon mixture into a decorating bag fitted with a large star tip. Pipe cream cheese mixture into center of each berry. Chill until ready to serve.

Yield: 32 strawberry flowers.

  Strawberry Parfait

  1 quart strawberries (or more)
  2 1/4 cups vanilla yogurt -- stirred smooth
  1/3 cup miniature semisweet chocolate chips
  1 1/2 cups chocolate wafer crumbs
  (about 22 chocolate wafers ground or crushed)

Set aside 4 strawberries for garnish. Pick over the rest, discarding any that are moldy or too soft; wash remainder briefly and dry gently but thoroughly. Hull, trim, and slice thinly; you should end up with about 3 cups.

Stir together the yogurt and chocolate chips; set aside.

Drop a few strawberry slices into the bottom of each parfait glass. Cover with a thin layer of crumbs, leveling the surface of the crumbs with a spoon. Cover crumbs with a layer of yogurt mixture. Don't be too generous with any one ingredient or you won't have enough to go around.

Repeat the strawberries-crumbs-yogurt mixture layering until the glasses are filled, ending with a layer of yogurt. As you fill up the glasses, try to place some of the strawberry slices against the outside of the glass, and push the slices part way into the previous layer (of yogurt) as you go along.

Garnish each parfait with one of the reserved strawberries. Prepare this dessert just before serving and serve immediately.

  Strawberry, Chocolate And Cheese Parfait

  1 cup Strawberries -- sliced
  1 tablespoon Strawberry* liqueur
  1/2 cup Part-skim ricotta cheese
  1 1/2 teaspoons granulated sugar
  1 1/2 teaspoons and whipping cream
  1/2 ounce chocolate chips

* Raspberry or cherry liqueur may be substituted for the strawberry liqueur

In small mixing bowl combine strawberries and liqueur; set aside. Using a fork, in separate small mixing bowl combine cheese, sugar, and cream; fold in chips. Into each of 2 long-stemmed glasses or individual dessert dishes spoon half of the cheese mixture, then top each with half of the strawberry mixture.

Serve immediately or cover and refrigerate until chilled.

  Strawberry-Cheesecake Pie

  1 cup chocolate chips
  1/4 cup oil
  strawberries
  2 commercial graham cracker crusts
  Cheesecake:
  32 oz plain lowfat yogurt (drain 24 hrs)
  1 3/4 tablespoons arrowroot powder
  2 egg whites
  2/3 cup sugar
  1 teaspoon vanilla
  Strawberry Glaze:
  1/2 cup strawberries -- crushed
  1/2 cup water
  1/4 cup sugar
  2 teaspoons cornstarch

Melt chocolate chips with oil. Pour into crusts until each is coated with thin covering. Set aside to cool. Mix together cheesecake ingredients. Pour into crusts and bake at 300 degrees about 40 minutes or until set. Cool. Top with strawberries. Combine glaze ingredients and cook until thickened. Cool and pour over pies. Chill and garnish with whipped cream before serving.

  White Chocolate Strawberry Mousse

  20 ounces white chocolate
  1 quart fresh strawberries
  1/2 cup strawberry preserves
  2 cups heavy cream -- whipped
  8 egg whites -- beaten stiff

Melt chocolate in the top of a double boiler. Set aside. Puree the strawberries. Strain and reserve liquid. Place the berries in a 1 quart saucepan, add preserves and cook over low heat until thickened. Remove from heat. Cool slightly. Fold into melted chocolate. Fold in whipped cream, reserving a small amount for garnish. Fold in egg whites. Garnish with fresh strawberries and whipped cream flavored with strawberry juice.

You can substitute raspberries for strawberries.
