  Chocolate Strawberry Shortcake from The 1785 Inn & Restaurant

  2 cups flour
  2 teaspoons baking powder
  4 Tablespoons unsweetened cocoa
  1/3 cup sugar
  1/2 teaspoon salt
  5 Tablespoons cold unsalted butter -- cut into five portions
  4 ounces chocolate chips
  3/4 cup milk

Combine flour, baking powder, cocoa, sugar, baking soda, and salt in a food processor. Add butter and chocolate chips and process until crumbly. Begin processing and add milk until mixture is crumbly but will hold together when pinched with fingers. Turn moistened dough out onto counter, form into a ball, and flatten into a circle approximately one inch thick.

Using a 2 inch round cutter, make 12 to 15 shortcakes. Place on cookie sheet lined with parchment paper. Bake in a 450 degree oven for 13 minutes. When slightly cooled, place on plate and cover with plastic wrap to keep them moist.

Strawberry Sauce:

Pure 2 quarts strawberries in a food processor. Remove from processor, pour into bowl, and add 2 cups sugar and 1/2 cup orange juice. Add 2 quarts sliced berries to the pureed mixture.

Whipped Cream:

Whip 2 cups heavy cream in bowl of electric mixer on high speed. When the mixture begins to thicken, add 1/2 cup confectioners sugar and teaspoons vanilla extract.

Assembly of Individual Shortcakes:

Place a tablespoon of sauce in the bottom of a dish. Place the bottom half of the shortcake on the sauce. Continue on with 2 Tablespoons sauce, 1 Tablespoon whipped cream, the top half of the shortcake, 2 more Tablespoons sauce, and top with 1 Tablespoon whipped cream. Garnish with fresh mint leaves.

  Chocolate Tuxedo Strawberries

  10 Fresh washed berries.
  4 oz chopped dark chocolate.
  4 oz chopped white chocolate.
  1 sheet parchment paper.

Melt chocolate in a double boiler, white and dark separately. Wash and dry berries.

Dip 1/2 of berry in dark chocolate and let cool. Dip the other 1/2 in white chocolate leaving a (v ) shape on the berry.

Place remaining dark chocolate in a paper pastry bag with a very small hole on the bottom, place three dots on the chest of the tuxedo with the dark chocolate.

Let cool and serve at room temperature.

  Chocolate-Dipped Strawberries

  Fresh Louisiana strawberries
  Candymaker's chocolate (milk -- dark, or white)*

Look for chocolate labeled as "couverture" chocolate

Wash the strawberries well, but do not remove stems. Spread the berries on towels or absorbent paper in a single layer, and allow to air dry until all water has evaporated (chocolate will not adhere properly if the berries are damp). Melt 1/2 pound chocolate in a double boiler deep enough to cover strawberries. Holding the berries by the stem, hand dip each one 3/4 of the way up to the top. Place on waxed paper and allow to harden or refrigerate until hard.

Keep refrigerated until ready to serve.

  Chocolate-Dipped Strawberries (2)

  1 pint basket California strawberries
  1 package semi-sweet chocolate chips -- (6 ounces)

Line baking sheet with waxed paper. Rinse strawberries and pat dry with paper towels; set aside. Put chocolate chips in microwave-safe bowl and microwave at 50 percent (medium power) 2 1/2 to 4 minutes until chips look soft and shiny. Stir well. Chocolate should be completely smooth. If chips are not completely melted, microwave a few seconds longer. Holding each strawberry by the stem end, swirl into chocolate to cover most of berry; lay on cookie sheet. When all strawberries are coated, refrigerate until chocolate is set.

  Chocolate-Dipped Strawberries (3)

  3 ounces bittersweet chocolate
  1 tablespoon butter
  1 teaspoon vanilla or orange extract
  12 large strawberries

Chop chocolate into small pieces. In a double boiler combine chocolate, butter, and vanilla or orange extract. Stir until chocolate is melted and smooth. Remove from heat.

Dip strawberries halfway into chocolate and place on waxed paper. Refrigerate until chocolate has set, about 10 minutes. Store in a cool place.

  Chocolate-Dipped Strawberries (4)

  chocolate melting wafers -- (light, dark & white)
  wax paper
  3 bowls
  3 forks
  microwave

Take your strawberries and rinse them. Next gently dry them. Place the three flavors of chocolate each in its own bowl. Place one bowl in the microwave and heat at 30 second intervals, stirring in between until it is smooth. (Be careful not to overheat!)

Now, take the strawberries and dip 1/3 of the strawberries one at a time into your first bowl of chocolate. Place onto wax paper. Continue with remaining chocolates and strawberries.

After they have set, (about 10 -15 mins.) take contrasting melted chocolate and drizzle your strawberries. Dip the fork into chocolate and swing the fork back and forth over the strawberries.

If you want to be fancy, place each one into small white cupcake liners and place on an attractive serving tray!
