Greek-Style Supper

1/2 pound ground beef
1/2 cup chopped onion
1 can beef broth -- (14 1/2 ounces)
1 can diced tomatoes -- (14 1/2 ounces) undrained
1 1/2 cups uncooked penne pasta
1 1/2 cups frozen cut green beans -- thawed
2 tablespoons tomato paste
2 teaspoons dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon ground cinnamon
3/4 cup crumbled feta cheese

In a large skillet, cook beef and onion over medium heat until meat
is no longer pink. Meanwhile, in a large saucepan, bring broth and
tomatoes to a boil; add pasta. Reduce heat; simmer, uncovered, for
15-20 minutes or until pasta is tender, stirring occasionally.

Drain beef mixture; add to pasta. Stir in the beans, tomato paste,
oregano, garlic powder and cinnamon; heat through. Sprinkle with feta
cheese.

Yield: 4 servings.

NOTES : Alice's hearty Greek-Style Supper is an all-in-one meal
that's sure to become a favorite. This cook adds a pinch of cinnamon
to make the dish shine, and feta cheese offers just the right flavor.
Better still, there's minimal prep work and clean up should be just
as easy! With 6 grams of fiber per serving, it'll fill you up on a busy
night.

Bobbie's Note: I made 1/2 of this dish but used about 7 ounces of
ground beef in large chunks. Delicious!

Grilled Peaches with Chocolate and Ice Cream

2 tablespoons butter -- melted
3 large ripe peaches -- halved and pitted
1 1/2 cups chocolate -- (dark or milk chocolate)
broken into small pieces
1/2 liter ice cream -- (1 pint)

Pre-heat the barbecue to medium-high heat and ensure that the grill is
clean. Grill the peaches flesh side down for 3 to 5 minutes or until
peaches begin to brown slightly. Transfer the peaches, flesh side up, to a
baking pan, barbecue pan or a double thick sheet of foil. Brush the peaches
lightly with melted butter and place equal amounts of chocolate in the well
of each peach. Cover the grill and cook until the peaches are soft and
tender all the way through. Serve warm with a scoop of your favourite ice
cream.

If you don't have a barbecue, you can still prepare this recipe indoors.
Heat a ribbed cast iron grill pan or frying pan (cast iron is ideal but any
frying will also do) on medium-high. Brush cut side of peaches with melted
butter and place cut side down in frying pan. Reduce heat to medium-low or
low and heat for 3 to 5 minutes to allow peaches to brown slowly . Turn
peaches flesh side up in frying pan and brush cut side lightly with melted
butter again. Place equal amounts of chocolate in the well of each peach
and cover with a lid. Cook for a minute or two until peaches are soft and
tender all the way through. Serve warm with a scoop of your favourite ice
cream.

Yields 6 servings.

"Peaches are one of my favourite fruits and BC peaches are now available at
farmer's markets and grocery stores. This is delicious and juicy fruit,
adding great flavour and texture to salads or stir fries. Today we are
showcasing an easy cooking treatment - a dessert of grilled peach halves
served with chocolate and ice cream."
