Raspberry Poppyseed Salad Dressing

1 tablespoon grated onion
3/4 cup sugar
1 teaspoon dry mustard
1 teaspoon salt
1/3 cup raspberry vinegar
1 cup vegetable oil
1 1/2 teaspoons poppy seeds

Combine onion, sugar, mustard, salt and raspberry vinegar. Whirl in blender
15 seconds. Slowly add vegetable oil & poppy seeds. Turn blender on and off
to mix.

This is one of my favorites when entertaining. It's a sweet tart and
wonderful over mixed greens.

If you can't find raspberry vinegar just use white vinegar and a good
tablespoon of seedless raspberry preserves or jam.

Roasted Garlic Vinaigrette (Gail's)

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 tablespoons red wine vinegar
2 tablespoons white wine vinegar
1/2 tablespoon sugar
1/2 teaspoon dried basil
1/2 teaspoon oregano
1/2 tablespoon lemon juice
2 roasted garlic cloves --* mashed
Sea Salt and Freshly Ground Pepper -- to taste

Here is an easy dressing from scratch if you prefer to make one on your
own.

Mix all ingredients well. Will store in refrigerator for 2 weeks.

*To roast garlic, coat head of garlic in olive oil, loosely wrap in foil
and roast for 30 to 45 minutes at 400 F or until garlic cloves are soft.
Carefully squeeze garlic cloves from their skins. You can also coat
separate cloves (skins removed) in olive oil and roast at 400F for 10 to
15 minutes or until soft.

Russian Dressing (Gonzo's)

2 cups catsup
1 cup oil
1/3 cup vinegar
1 cup honey
1/3 cup sweet pickle relish
2 teaspoons celery seed
2 tablespoons Kitchen Bouquet
4 tablespoons dried minced onions
2 tablespoons dried minced garlic

Combine above ingredients and allow flavors to blend at least 4 hours in
the refrigerator.

Makes 1 quart.
