Doug's Onion Leek Pie

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 leeks -- washed well and sliced,
both white and green parts of leeks
1 large white onion -- sliced
6 green onions -- (scallions) chopped
3 large eggs -- beaten with
1/4 cup milk
1/4 teaspoon black pepper
1/4 teaspoon chile powder -- (powdered chile pepper)
1/4 teaspoon thyme
1 cup grated old cheddar cheese
Olive oil

Simmer the onions and leeks in about 2 to 3 tablespoons olive oil, in
batches until onions are translucent; add the scallions and remove from
heat to cool. I used a bought deep dish 9-inch unbaked pie shell as Marie
did not have any pastry made up. Beat the eggs again and mix in the spices.
Dump the cooled veggies into the pie shell; add the egg/milk/spice mixture
and place in pre-heated 375F oven. Keep an eye on this and when the egg
mixture is set, remove and add the cheese; at that time I also placed the
pastry edge covers over, so that the pie would not get too brown on edges.
Must tell you, that I had 1/3 cup of milk to start and my pie overflowed!
Dunt do dat!! Anyway, after about 50 minutes the pie was done! Everything
set up very well and the cheese melted over the top of the pie. It looked
wonderful! AND it tasted just great, which is why I posted it!

As Hallie is aware, I do not post anything that I have not done myself! I
like to know whatever I make, is fit to pass our very particular standards!
Which is why I devise my own recipes!!

addendum...I added more of my own ground chile pepper on the top of the
cheese, when I put it on. Of course!!
