Doug and Marie's Chicken Dinner

1 chicken -- brined
1 lemon
1 onion
1 garlic head
Butter
Olive oil
Freshly ground black pepper
Stuffing -- your favourite
Onions -- boiled
Potato -- baked
Broccoli

Can I take a hint? Well, only so far! So this is what I started
yesterday, and we had the first meal from it tonight. As a local store
has chickens on at a reasonable price, I decided to get one of the two
we had in the freezer, to make room for new ones! So, brined it from
yesterday AM until this afternoon, rinsed it and put it in the fridge to
firm up the skin. Then late this afternoon, got a lemon, and onion,
whole head of garlic, butter & olive oil, and went to work. Stripped the
skin from the lemon and place it under the skin of the chicken....sorta
fair exchange kinda thing! Rest of the lemon got cut in half and into
the body cavity, along with the onion cut in half as well. Chopped the
whole head of garlic in half through the middle and placed those halves
beside the chicken. Marie sewed up the cavity, and into a very hot oven
it went at 450F for about 20 minutes, and then I cut the heat to 375F
and left it for about an hour. I had previously spread butter and olive
oil all over the skin, and when I cut the heat down, I peppered the bird
with freshly ground black pepper. No salt, it is not required if you
brine. It came out absolutely perfect, looked pretty and it tasted
wonderful! The garlic we squeezed out of the skins, and ate along with
the chicken. I also did boiled onions, baked potato and broccoli and
Marie did her famous stuffing (which really is haggis, made with oats &
bread) A scrumptious meal! Cheers, Doug in BC where it is pouring
