Pumpkin Sheet Cake

16 ounces canned pumpkin
2 cups sugar
1 cup vegetable oil
4 eggs -- slightly beaten
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
*Frosting*
6 ounces cream cheese
10 tablespoons butter -- softened
1 teaspoon vanilla
3 1/2 cups confectioners' sugar
2 tablespoons milk -- (2 to 3)
Chopped nuts
In a mixing bowl, beat pumpkin, sugar and oil. Add egg, mix well. Combine
flour, baking soda, cinnamon and salt; add to pumpkin mixture and beat
until well blended. Pour into a greased 15x10x1-inch baking pan. Bake at
350 degrees F. for 25-30 minutes or until cake tests done.
For frosting: Combine cream cheese and butter and vanilla; beat until
fluffy. Gradually add sugar, mix well. Add milk until frosting reaches
desired spreading consistency. Frost cake. Sprinkle with nuts if desired.
Connie's notes: I have made this a couple of times. It is great for a
potluck as it makes a big cake.

Pumpkin Spice Bread

1 package spice cake mix
15 1/2 ounces pumpkin puree -- (1 can)
2 eggs
Mix together.
Spoon into 4 mini-loaf pans.
Bake at 350 degrees F. for 40 minutes.
