Hearty Pantry Stew

1 cup onions -- diced
1/4 cup celery -- diced
2 cans tomatoes with green chilies
2 cans water
1 package taco seasoning mix
1 can pork and beans
1 can corn
1/4 cup celery leaves -- chopped
1 box macaroni & cheese mix
Saute onions and celery until semi-translucent.
Combine all ingredients, bring to boil and simmer until macaroni is tender,
about 10 minutes, stirring frequently.
NOTES : Modify quantities onion, celery and taco mix to taste. This is
rather spicy. Some people will probably prefer using 1/2 package (2
tablespoons) of the taco mix.

Honey-Glazed Sweet Potatoes

1 1/2 pounds sweet potatoes -- peeled and quartered
2/3 cup orange juice -- divided
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 tablespoon butter or margarine
1 tablespoon cornstarch
1/3 cup honey
Combine sweet potatoes and 1/3 cup orange juice in 2-quart microwave-safe
baking dish; sprinkle with ginger and nutmeg. Dot with butter. Cover and
microwave at HIGH (100%) 7 to 10 minutes or until sweet potatoes are
tender, stirring halfway through cooking time. Combine cornstarch,
remaining 1/3 cup orange juice and honey in medium microwave-safe bowl.
Microwave at HIGH 2 minutes or until thickened, stirring every 30 seconds.
Drain liquid from sweet potatoes; add to honey mixture. Microwave at HIGH
1 minute. Pour sauce over sweet potatoes and microwave at HIGH 1 minute
more or until sweet potatoes are thoroughly heated.

Hallie's notes: I used two medium-large sweet potatoes which I cut into
chunks approximately 1 1/2 inches (4 cm) square. I also used fresh orange
juice squeezed from 2 navel oranges which was a little too much for our
tastes as it turned out. Next time I would cut back on the orange juice and
also on the honey as the whole dish was a tad too sweet. In fact I think it
might work very well to use water instead of orange juice for cooking the
sweet potatoes and only use the orange juice in the glaze. Other than that
the dish worked very well and the recommended time was OK with my
microwave. I took it to a Thanksgiving dinner on Monday and even people who
said they didn't really care for sweet potatoes came back for seconds.
