Santa Fe Hummus - 7 pts

4 large garlic cloves -- peeled
2 cans chickpeas -- drained well (15- to 16-ounce)
1/2 cup mild green taco sauce -- (such as La Victoria)
1/4 cup tahini
1/4 cup fresh lime juice
1/4 cup olive oil
1/2 cup chopped fresh cilantro -- (packed)
2 tablespoons chopped seeded deveined jalapeno chiles
Tortilla chips

With processor running, drop garlic down feed tube and chop. Scrape down
sides of bowl. Add chickpeas, taco sauce, tahini, lime juice and oil; blend
until almost smooth, stopping to scrape down sides of bowl occasionally.
Add cilantro and jalapenos. Blend briefly, using on/off turns. Season
hummus to taste with salt and pepper. Transfer to serving bowl. Serve
hummus with tortilla chips.

DO-AHEAD TIP: Hummus can be prepared 1 day ahead. Cover and refrigerate.
Bring to room temperature before serving.

Yields 3 1/2 cups; Serving size = 1/2 cup; Serves: 7

NOTES : The classic Middle Eastern garbanzo bean and sesame seed dip gets a
few southwest touches and becomes an exciting new offering. The jalapenos
are seeded and deveined, so don't worry, the hummus isn't very spicy. If
your tahini has separated, just remove the metal top and microwave it on
low for a few 15-second intervals to warm it, then whisk to blend it
together.

Skillet Shepherd's Pie

1 pound ground beef
1 cup chopped onion
2 cups frozen corn -- thawed
2 cups frozen peas -- thawed
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
2 teaspoons minced garlic
1 teaspoon beef bouillon granules
1/2 cup boiling water
1 tablespoon cornstarch
1/2 cup sour cream
3 1/2 cups mashed potatoes -- prepared with
milk and butter
3/4 cup shredded cheddar cheese

In a large skillet, cook the beef and onion over medium heat until the meat
is no longer pink; drain. Stir in the corn, peas, ketchup, Worcestershire
sauce and garlic. Reduce heat; cover and simmer for 5 minutes.
Meanwhile, in a small bowl, dissolve bouillon in boiling water. Combine
cornstarch and sour cream until smooth; stir into beef mixture. Add
bouillon. Spread mashed potatoes over the top; sprinkle with cheese. Cover
and cook until potatoes are heated through and cheese is melted.

Serves 6.

NOTES : "This is the best shepherd's pie I've ever tasted," shares Tirzah
Sandt of San Diego, California. "It's very quick to make and you should
have most - if not all - of the ingredients already on hand." Tip:
"Served with fruit, it's a complete meal," Tirzah adds.

Bobbie's Note: This was very good. I used a very large skillet and next
time would use a standard 10-inch skillet so the potatoes cover easily. I
would also add a little salt and pepper.

Smoky Chipotle Hummus With Garlic Bagel Chips - 1 Pt Excluding Chips

2 cans garbanzo beans (chickpeas) -- drained (15-ounces)
1/2 cup water
1/4 cup tahini -- plus 2 tablespoons (sesame seed paste)*
3 tablespoons fresh lemon juice -- plus 2 teaspoons
2 tablespoons olive oil
10 1/2 teaspoons minced canned chipotle chilies**
1 large garlic clove -- minced
5 1/2 teaspoons ground cumin
1 jar pimientos -- drained (4-ounce jar, sliced, in oil)
1/3 cup chopped fresh cilantro
2 packages bagel chips -- 6-ounce roasted-garlic flavor

Reserve 3 tablespoons garbanzo beans for garnish. Blend remaining garbanzo
beans and next 7 ingredients in processor until smooth. Add pimientos; 
process,
using on/off turns, until pimientos are coarsely chopped.

Transfer hummus to medium bowl. Stir in cilantro. Season hummus to
taste with salt and pepper. Sprinkle with reserved garbanzo beans.

Can be made 1 day ahead. Cover and chill. Bring to room temperature
before serving. Accompany with bagel chips.

*Sold at Middle Eastern markets, natural foods stores and some supermarkets.

**Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo,
are available at Latin American markets, specialty foods stores and some
supermarkets.

Makes 20 servings.
