* Exported from MasterCook * Liqueur Vieux Garcon (Old Boy's Liquor) Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 9-08 Aug 2006 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Fruit, added according to their ripening time: cherries, apricots, raspberries, strawberries, red currants, peaches, melon, prunes, etc. 750 grams caster sugar -- (21 ounces) per 1 kilogram fruit -- (28.3 ounces) 4 deciliters white eau-de-vie -- (13.5 US oz) per 1 kilogram fruit -- (28.3 ounces) Stoneware is the best to macerate the above fruit. It should be large enough to contain several pounds of fruit. Fruit can be added a little at a time, whenever they are ripe. Wash fruit, dry them with clean paper towels and remove stones from apricots, peaches and prunes. Do not remove pits from cherries. Place fruit in stoneware jar. Add sugar according to quantity of fruit (750 g/kg or 21 oz per 28.3 oz of fruit). Cover with eau-de-vie. Close stoneware jar tightly and keep in a cool dry place. Add more fruit as soon as they are ripe. Adjust fruit/alcohol ratio. Fill jar up to 2 cm (3/4 inch) from the top. Add alcohol up to the top. Close tightly and let it rest for at least one month.
