Raspberry Liqueur

1 pound fresh raspberries -- (450 g)
3 cups vodka -- (710 ml)
or 1 1/2 cups pure grain alcohol
plus 1 1/2 cups water
1 1/2 cups sugar -- (350 g)
Rinse and check the raspberries and place them in a jar, add vodka and mix.
Stir daily during the first days, later at least once a week for 3-4 weeks.
Filter the mixture of berries and alcohol and transfer the liquid to a
bottle. Add sugar and shake until dissolved. After three months strain the
liqueur through a cloth. Add some more sugar if necessary. The liqueur
should mellow for at least 6 months before drinking, preferably for 12
months.
The color of the raspberry liqueur is bright red, the flavor is
delicious if the sugar content is correct and if the liqueur has been
properly mellowed.
This recipe can also be used for blackberries, boysenberries, loganberries
and cloudberries.

Retro Ambrosia

1/2 cup cream cheese -- at room temperature
[about 4 ounces]
1/2 cup sour cream
1 tablespoon light brown sugar
2 teaspoons light brown sugar
1 tablespoon fresh lemon juice
1 ripe pineapple -- peeled, cored
and chopped (about 5 1/2 cups)
1 pound ripe cherries -- pitted and halved
[about 2 1/2 cups]
3 oranges -- peeled and sliced
[about 1 cup]
2 grapefruit -- peeled and sliced
[about 1/2 cup]
1 cup pecans -- toasted
[7 minutes at 350F]
1 cup coconut -- toasted
[10 minutes at 350F]
Please, please, quit your crying about how you cannot stand ambrosia. This
isn't your mama's ambrosia! While I like a lot of classic potluck dishes,
classic ambrosia just needs a little something. I found that something by
using fresh fruit. I kept that creamy dressing everyone loves, but when
combined with fresh fruit and toasted nuts, the results are positively
heavenly!
Combine the cream cheese, sour cream, brown sugar, and lemon juice in a
large bowl. Whisk to blend. Add the pineapple, cherries, oranges,
grapefruit, and pecans and stir to mix. Place in a serving dish, garnish
with the coconut, and serve immediately.
Makes about 8 cups, 8 servings
AMBROSIA - Bet you didn't know that ambrosia was the word used to describe
the food and drink of the Greek and Roman gods. And its Latin root means
"immortality" - so have some!
