8 chicken thighs
Flour for coating
1 large onion -- sliced thinly
2 garlic cloves -- finely chopped
4 medium potatoes -- cut in chunks
10 ounces condensed cream of mushroom soup -- (one 284 mL can)
10 ounces canned sliced mushrooms -- (284 mL)
1/4 cup white wine
or sherry or apple juice
1 teaspoon salt
1 pinch cayenne pepper
2 teaspoons Greek seasoning
Oil for browning chicken
Puff pastry

Preheat oven to 350F (180C).

Lightly coat the chicken with the flour and fry until nicely browned.

Place the onion, garlic and potatoes into an ovenproof casserole dish. Add
the browned chicken pieces. Spread the mushroom soup over the chicken; add
the canned mushrooms with their liquid and the wine. Sprinkle with the
seasonings.

Cover and bake for 1 hour.

Roll out enough puff pastry to cover the casserole; when the dish has
cooked for the one hour remove the lid and replace it with the pastry. Turn
the oven up to 400F (200C) and continue to bake for another 15 minutes or
until the pastry is puffed and golden.

Serves 4.
