* Exported from MasterCook * Ziti Al Telefono with Baby Spinach Salad and Choco-Banana Dessert For 1 Recipe By :Adapted by Claudia for 1 Serving Serving Size : 1 Preparation Time :0:00 Categories : Volume 9-03 Mar 2006 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Ziti Al Telefono 1 cup Basic Tomato Sauce 1 medium tomato -- cut into 1/4-inch cubes 1/4 cup basil leaves -- stems removed 1/2 pound Ziti pasta 1/4 pound fresh mozzarella -- cut into 1/4-inch cubes Accompaniment: Baby Spinach Salad 1 tablespoon olive oil 1 tablespoon 7-up -- or ginger ale 1 teaspoon balsamic vinegar 1 teaspoon Dijon mustard 1 teaspoon orange zest 1 tablespoon orange juice 1/4 teaspoon freshly grated ginger Salt and pepper to taste 1 pinch red pepper flakes Dessert: Choco-Banana 1 banana -- (unpeeled) 25 grams dark chocolate -- (1 ounce) Place 2 quarts water to boil and add 1/2 tablespoon salt. In a 12- to 14-inch sauté pan, place Basic Tomato Sauce and tomato and bring to a boil. Lower heat to simmer and add basil leaves without stirring. Cook pasta according to package instructions, until just short of "al dente". Drain in colander and toss into pan with tomatoes and basil. Add mozzarella pieces and toss over medium heat until cheese is just melting. Pour into warm bowls and serve immediately. Cut 25 grams (1 ounce) of dark chocolate into small chunks. Spread them on banana. Microwave banana for 15 seconds (or less, according to microwave power). Serve as is. Cut both ends and slice it lengthwise. Melt butter on high in an oven-proof pan. Add zucchini halves, open face down. Cook until golden. Turn them over; add salt and pepper, sprinkle grated cheese on top of zucchini. Cover the pan, place it on middle rack in a 180 degrees C (350F) preheated oven and cook for 20 minutes. Heat cream in a small pan on medium heat. Do not bring to a boil. Pour over zucchini right before serving. Suggested Accompaniment: a slice of white cooked Italian ham.
