                         Doug's Chicken in Sticky Rice For 1

Amount Measure Ingredient -- Preparation Method

1/3 cup sweet rice -- (sticky rice)
rinsed and soaked with cold water to cover
for about 20-30 minutes
1/3 cup diced onion
1/3 cup diced red pepper
1/4 cup edamime --(green soy beans)
[these are available in the frozen
food section or at most Asian grocers]
4 ounces chicken breast -- any visible fat removed
Marinade:
1 tablespoon soy sauce
1 teaspoon chopped ginger root
1 teaspoon chopped garlic
1 teaspoon sesame oil

Marinate the chicken breast in the above 4 items for at least 15 minutes,
while the rice is soaking, then sear it in a hot skillet until brown on
both sides. Remove and keep warm.

In another pot, add a little peanut/olive oil and simmer the onion and
pepper. Drain the rice, add to the pot, lay the chicken breast on top of
the rice, add the soy beans, add about half cup water to the reserve
marinade, add to the rice mixture. Bring up heat to simmer and cover. Cook
on simmer for about 10 minutes or so and check for done.

It will make a great meal for one person, with perhaps a little rice left
over. Or maybe not! Serve with a tossed green salad.

Enjoy!

Another word if I may, as I now cook exclusively for just the two of us,
any of my recipes that I devise may be simply cut in half for one.
