* Exported from MasterCook * Orange-Scented Hot Chocolate Recipe By : Bon Appetit, May 1992 Serving Size : 2 Preparation Time :0:00 Categories : Volume 9-02 Feb 2006 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups milk 4 ounces bittersweet chocolate -- chopped or semi-sweet chocolate -- chopped 3 pieces orange peel -- (2x1-inch strips) [orange part only] 1/2 teaspoon instant espresso powder or instant coffee powder 1/8 teaspoon ground nutmeg Combine all ingredients in heavy medium saucepan. Stir over low heat until chocolate melts. Increase heat and bring just to a boil, stirring often. Remove from heat and whisk until frothy. Return to heat and bring to boil again. Remove from heat; whisk until frothy. Repeat heating and whisking once again. Discard orange peel. Can be prepared 2 hours ahead. Let stand at room temperature. Before serving, bring just to boil, remove from heat and whisk until frothy. Pour hot chocolate into mugs. Yields 2 servings. MC format by Hallie. Untried. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 0 Fruit; 1 Non-Fat Milk; 7 1/2 Fat. * Exported from MasterCook * Overseas Fruit Bars Recipe By : Serving Size : 36 Preparation Time :0:00 Categories : Volume 9-02 Feb 2006 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons butter 1 cup sugar 1 tablespoon hot water 2 eggs 1 cup flour 1 teaspoon baking powder 1 cup chopped nuts 1 pound stoned dates -- (cut fine)* 1/2 teaspoon vanilla Let butter stand in large bowl of Mixmaster until soft. Add sugar and 1 egg and beat at No. 8 speed for one minute. Add the other egg and beat one minute longer; then add hot water and vanilla and beat a few seconds, still using No. 8 speed. Turn to No. 1 speed and add 3/4 of the flour, which has been sifted with the baking powder and beat until well blended. Add dates, which have been mixed with the remaining flour, a little at a time. Scrape bowl, add nuts and beat a few seconds longer. Spread dough thinly in a long, shallow pan. Bake in a moderate oven (350 F) about 25 minutes. Cool; cut in strips about one inch wide and three inches long. Roll in sifted powdered sugar, if desired. *Raisins or prunes may be substituted, but should be soaked in water for about a half hour, then well drained. "Here's an answer to that oft-repeated wish, "If only I could think of something 'different' to pack in my next overseas package." These fruit bars have the qualities desired in foods for distant shipping - they keep well, will not crumble and are nutritious and palatable. This recipe was on the back of a card that read "Buy A War Bond NOW-for your SUNBEAM MIXMASTER after Victory" I have not tried this recipe but hope that someone will and be able to send it to someone who is now in another war.
