                    Old Fashioned Oatmeal Cookies

2 tablespoons oil
2 eggs
3/4 cup sugar
1/2 cup nonfat dry milk powder
1/2 cup water
3/4 cup applesauce
1 1/4 cups whole wheat flour
1/3 cup soy flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
2 1/2 cups quick rolled oats

Preheat over to 350F.

Cream oil, sugar and eggs until smooth. Add powdered milk, applesauce and 
water and mix thoroughly.

In a small bowl, sift together flours, soda, baking powder, spices and
salt. Add dry flour mixture to liquids and mix on low speed until blended
and smooth. Add oats and any additions and mix until oats are thoroughly 
moistened.

Drop dough by 1/8 cup portions onto lightly greased cookie sheets - about 
3 inch centers. Bake 20-22 minutes until lightly browned. Cool on a wire 
rack.

A nutritious 'muffin' type oatmeal cookie as an alternative to the sugar
and shortening 'crispies' that are so often made. I developed this
incarnation for my wife, who was diabetic and had weight and heart
problems.

Additions - all the usual suspects are eligible. This recipe is based on my
grandmother's, who used finely chopped hickory nuts and dates. A nut and
fruit trail mix, coconut, raisins, most nuts, and chocolate chips all work
fine.

1/3 cup maple syrup
1/2 teaspoon salt

2 teaspoons orange extract
or orange liquor

Combine ingredients and whisk until smooth.
