* Exported from MasterCook * Lentil Soup Recipe By : Jennie Serving Size : 4 Preparation Time :0:00 Categories : Volume 8-09 Sep 2005 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound lentils 1 onion 1 garlic clove 2 stalks celery 4 tablespoons olive oil 1 teaspoon chopped parsley 1/2 cup tomatoes, canned Salt and pepper Cook lentils in 2 quarts of boiling water for one hour. Chop onion, garlic, and celery; put into saucepan with oil and parsley; cook until slightly browned add tomatoes and cook for ten minutes longer; add mixture to pot with lentils; cover, let simmer for 10 minutes or until lentils are soft. Serve in deep soup bowls and sprinkle with grated Romano cheese if desired.
