* Exported from MasterCook * Fagioli Toscanelli (Tuscan Bean and Tuna Antipasto) Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Volume 8-09 Sep 2005 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup extra virgin olive oil 2 tablespoons lemon juice or white wine vinegar Salt and freshly ground pepper to taste 2 cans cannelini beans -- rinsed and drained or other white beans 2 scallions -- green and white parts -- thinly sliced 3 tablespoons flat leaf parsley -- finely chopped 1 can tuna -- packed in oil, drained Whisk together the oil, lemon juice, salt and pepper. Combine with the beans, scallions and parsley, tossing to combine well. Break the tuna into chunks and arrange on top of the beans. Serve chilled or at room temperature. Serves 4 to 6.
