* Exported from MasterCook * Grilled Jerk Chicken Recipe By : Serving Size : 4 Preparation Time :0:10 Categories : Volume 8-08 Aug 2005 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 teaspoons curry powder 4 teaspoons ground cumin 4 teaspoons paprika 3 teaspoons ground ginger 3 teaspoons ground allspice 1 teaspoon salt 1 teaspoon cayenne pepper 1 teaspoon black pepper -- coarsely ground 4 bone-in chicken breast halves -- with skin [8 ounces each] 4 chicken thighs with skin -- (4 ounces each) In a small bowl, combine the first eight ingredients; rub over chicken pieces. Cover and refrigerate for 1 hour. Grill chicken, covered, over indirect medium heat for 30-40 minutes or until juices run clear. Makes 4 servings. But for a side dish that's a bit sweet, try grilling bananas. Keeping the peel on, cut firm bananas in half lengthwise. Spray the cut side with butter-flavored cooking spray. Grill for 1 minute on each side. Brush the cut side with molasses and serve. NOTES : Just What is "Jerk?" "Jerk" refers to a dry seasoning blend that originated on the Caribbean islands after which it's named. The ingredients can vary but usually include peppers (like cayenne or chilies) and spices (like allspice, ginger and cinnamon). Bobbie's Note: This was delicious! I made up half of the Jerk Rub, but only used 1/2 of that for 4 chicken thighs. I did cook the marinated chicken for about 7 minutes in the microwave before putting it on the grill. I cooked it there for about 25 minutes, using indirect heat, as directed in the recipe. It was spicy but very flavorful.
