* Exported from MasterCook * Almost Eggplant Parmesan Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 8-08 Aug 2005 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Eggplant Beaten egg Italian seasoned bread crumbs Mozzarella cheese Tomatoes Olive oil Peel and slice eggplant lengthwise about 1/4-inch thick. Sprinkle with a little salt, cover with a sheet of wax paper, then place a weight over the slices to exude some of the moisture. After 15 or 20 minutes, wipe off the salt. Dip slices into beaten egg, then into Italian seasoned bread crumbs. Fry until golden brown. Remove from skillet and dry on paper toweling. To assemble: Place one slice of eggplant on baking sheet, top with mozzarella cheese, grated or sliced, add another slice of eggplant, and top that with more mozzarella cheese. Place sliced tomatoes over the cheese, then drizzle with olive oil. Bake at 350F. until the cheese melts. One stack per serving. Contributed to the FareShare Gazette by Alice; 27 August 2005 www.fareshare.net - - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Asian Beef Kabobs Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Volume 8-08 Aug 2005 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons brown sugar, packed 1 1/2 tablespoons dry sherry 1 1/2 tablespoons soy sauce 1 teaspoon dark sesame oil 1 garlic clove -- crushed 1/4 teaspoon ground ginger 1/2 pound boneless beef top sirloin steak -- cut into 1/4-inch-thick slices 3 green onions -- cut into 1 1/2-inch pieces 8 mini bamboo skewers -- 6-inch Combine first 6 ingredients in a bowl. Place beef and half of marinade in a plastic bag, turning to coat. Close securely and marinate in refrigerator 20 minutes. Reserve remaining marinade. Meanwhile, soak bamboo skewers in water 10 minutes and drain. Remove beef from marinade and discard marinade. Alternately thread beef, weaving back and forth, and green onion onto skewers. Arrange on broiler pan and broil about 3 inches from heat source 3 minutes and turn. Broil another 2-3 minutes, basting with reserved marinade. Prep : 15 minutes. Marinate: 20 minutes. Cook: 5 minutes. The recommended wines are: Merlot, Beaujolais or Chianti.
