1 cup watermelon -- seeded and cubed
1 cup ginger ale
or lemon-lime carbonated beverage
2 tablespoons frozen limeade concentrate -- thawed
1 cup frozen unsweetened strawberries

In blender or food processor, process watermelon, carbonated beverage and
limeade concentrate until liquefied. Gradually add frozen strawberries
blending just until slushy. Serve immediately.

                                Watermelon Sipper

Puree; Freeze:
6 cups watermelon -- seeded
cut into chunks
1/3 cup fresh lime juice
1/3 cup sugar
Pour Over Cubes:
6 ounces ginger beer -- (6 to 8 ounces)
Garnish with:
Fresh mint sprigs

This recipe calls for ginger beer. A carbonated, usually nonalcoholic
beverage similar to ginger ale, but with more "bite." Its spiciness is due
to a substantial amount of ginger. Find ginger beer alongside other drink
mixers (such as club soda) at specialty food stores and some grocery
stores.

Puree watermelon, lime juice, and sugar in a blender or food processor.

Pour into two ice cube trays and freeze solid. Place 3 or 4 watermelon
cubes into each serving glass.

Pour ginger beer over the cubes.

Garnish each drink with a sprig of fresh mint.

                          Wild Rice and Chicken Casserole

2 cups cut-up cooked chicken -- or turkey
1/2 cup frozen green peas -- (from 1-pound bag)
2 1/4 cups boiling water
1/3 cup milk
1 small onion -- chopped (1/4 cup)
1 can condensed cream of mushroom soup -- (10 3/4 ounces)
6 ounces seasoned long-grain and wild rice -- (1 package)

Heat oven to 350 F.

Mix all ingredients including seasoning packet from rice mix in ungreased
2-quart casserole.

Cover and bake 45 to 50 minutes or until rice is tender. Uncover and bake
10 to 15 minutes longer or until liquid is absorbed.

Prep time: 10 minutes
Baking Time: 1 hour, 5 minutes

Serves 6
