                                    Espresso Mousse

3/4 cup cold strong espresso coffee -- (175 mL)
2 teaspoons gelatin -- (10 mL)
2 egg yolks
3 egg whites
1/2 cup sugar -- (125 mL)
1/3 cup sifted cocoa powder -- (75 mL)
1/2 cup skim milk -- (125 mL)
1 teaspoon vanilla -- (5 mL)
3 ounces tofu, firm silken -- drained (85 g)
3 tablespoons brown sugar -- (45 mL)
1 envelope dessert topping

Put the cold coffee in a saucepan and sprinkle the gelatin over to soften
for 5 minutes.

Whisk in the egg yolks.

Mix the sugar and cocoa together; add gradually to the coffee mixture.
Cook, stirring constantly, over medium-low heat until thickened. DO NOT
BOIL. Remove from heat and cool to room temperature.

Beat the egg whites to the soft peak stage; fold into the cooled custard.

Whirl the milk, vanilla, tofu and sugar in a blender until smooth.

Beat the dessert topping with the tofu mixture until thick and fluffy.
Fold 1 1/2 cups (375 mL) into the custard mixture until well blended.

Divide into 8 serving dishes (or one large bowl) and refrigerate until
firm.

Before serving top with plain or coffee-flavoured topping. Sprinkle lightly
with cocoa powder and shaved chocolate.

One serving (without garnish: 147 calories; 3 grams fat.
