                  Lucia Ginger Snaps (Luciapepparkakor)

  1 1/2           cups  heavy cream -- (375 mL)
  2 1/2           cups  brown sugar -- (625 mL)
  1 1/4           cups  molasses -- (300 mL)
  1         tablespoon  ginger -- (15 mL)
  1         tablespoon  grated lemon rind -- (15 mL)
  2        tablespoons  baking soda -- (30 mL)
  9               cups  flour -- (2.25 L)

Whip cream; add sugar, molasses, ginger, lemon rind and baking soda and
stir for 10 minutes.
Add flour and work until smooth.

Cover and leave in a cool place overnight.

Turn onto a floured work surface and roll out thin.

With floured cutters cut out Santa Claus shapes, gingerbread men, houses,
animals or other desired figures.
Brush with water and bake on a greased cookie sheet in a slow oven
(250F/120C) for 15 minutes.
Leave on sheet to cool.

This recipe can be used to make gingerbread houses.

Hallie's note: I have no idea just how much the cream is to be whipped.

Gotesborgsindustrier, Gothenburg, Sweden; edited by Sam Widenfelt.

Editor's note: 'Swedish Food' is the work of the Home Economics Department
of the publisher in collaboration with Mrs. Emmie Berg, a former resident
of Montclair, N. J., who has compiled the recipes especially for this
book. They are based partly on 'Stora Kokboken' by Edith Ekegardh and
Britta Haggren, a leading Swedish cookbook issued by the same publisher.
All recipes have been tested and the pictures set up in the Department's
own kitchens by an expert staff. Some recipes have also been tested by a
Home Economics Consultant in the United States.
