* Exported from MasterCook * Fourth of July BBQ'd Cornish Hens (Lo-Carb) Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Volume 8-01 Mar 2005 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 garlic cloves -- minced 1 tablespoon seasoned salt 1/2 cup olive oil 1 cup fresh lemon juice 12 teaspoons Italian salad dressing 1/2 cup chopped onions 1 bell pepper -- diced 1 teaspoon crushed dried thyme 4 Rock Cornish hens -- giblets removed Blend garlic, seasoned salt, oil, lemon juice, Italian dressing, onions, pepper and thyme. Place in jumbo sized Zip-Loc bag. Place Cornish game hens in bag. turn bag over and over and gently squeeze until birds are coated good. Leave in refrigerator for 24 hours, turning bag when you think of it. Cut birds lengthwise. Cook on outside grill, bone side down 10 minutes, flesh side down 5 minutes, alternating 10 minutes and 5 minutes in this manner for about 1 hour and basting with marinade frequently (at least every 10 minutes) while barbequing. Serves 4 to 8 1 whole bird has 3 carbs If it's raining and you can't get outside to barbeque, just use the oven method. Preheat Oven to 400 degrees F. Place skin side up in shallow pan (you have sprayed with Pam), baste with marinade, cover with foil and roast 30 minutes. Remove foil and brush with marinade again. Roast again uncovered for 20-30 minutes (brush with marinade every 10 minutes). Test for doneness, drumsticks should be soft and juices should not be tinged with pink when pierced in thickest part of thigh with a fork.
