* Exported from MasterCook * Paella Rapida Recipe By : Barbara Knezovich, McKeesport, PA Serving Size : 4 Preparation Time :0:00 Categories : Volume 8-02 Feb 2005 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups chicken broth 1/4 teaspoon saffron threads -- crushed nonstick cooking spray 1/2 pound shrimp -- peeled and deveined salt and pepper 1 onion -- chopped 2 garlic cloves -- minced 14 ounces tomatoes -- with juice (1 can) 1/8 teaspoon red pepper flakes 1 cup Arborio rice 1 cup artichoke hearts -- canned or frozen -- thawed 1 cup frozen peas -- thawed 1/3 cup roasted red pepper -- cut into strips In a saucepan over Medium heat, combine the chicken broth and saffron. Bring to a simmer, then remove from heat. Spray a large, deep skillet with nonstick cooking spray and place over Medium heat. Add the shrimp to the skillet, season with salt and pepper to taste; saute for 3 to 4 minutes. Remove from skillet. Spray skillet again and add the onions and garlic. Saute for 3 to 5 minutes. Stir in the tomatoes and red pepper flakes, breaking up large pieces. Add the rice, stir in the chicken broth mixture and bring to a simmer. Cover and cook for about 20 minutes. Stir in artichokes, peas, peppers and shrimp. Cover and cook for 5 to 10 minutes. Makes 4 servings. Exchanges: 2 1/2 Grain(Starch); 2 Lean Meat; 2 1/2 Vegetable; 0 Fat. * Exported from MasterCook * Pretend Pizza (Low Carb) Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Volume 8-02 Feb 2005 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small baking dish 1 slice low carb bread 1 egg 1/4 cup Parmesan cheese spices -- dried onion flakes, Italian seasoning, garlic a few tablespoons heavy cream Ricotta cheese some bottled pizza sauce Mozzarella cheese Toppings of choice -- Pepperoni, Italian Sausage, Hamburger, Green Pepper -- Mushrooms or any used on top of pizzas Preheat oven to 350 degrees F. Spray a small single serving baking dish with Pam or use butter to grease it. Rip up the piece of bread. Place in bottom of bowl. Break an egg over bread, mix Parmesan cheese, spices and enough cream to wet the mixture and mix together well. Smooth mixture into bottom of baking dish. Take ricotta, as much as you like, and spread over bread mixture. Spread some sauce over top. Place mozzarella and other toppings on top of sauce. Then sprinkle more cheese over top. Let sit 10-15 minutes Bake for 20-25 minutes, until bubbly and when bottom is lifted up the bottom is brown. Let sit 5 minutes then eat.
