                   Easy Oriental Cucumber Salad Recipe

  1                     cucumber
  2                     green onions
  1         tablespoon  white vinegar
  1         tablespoon  vegetable oil
  1         tablespoon  soy sauce
  1             packet  Splenda
     1/2      teaspoon  ginger
     1/4      teaspoon  white pepper

Peel and slice the cucumbers. Slice the green onions into small pieces.

Mix all ingredients in a bowl until cucumbers are coated. Serve alone or
over lettuce.

Servings : 2

                            Easy Rhubarb Cake

  1                     yellow cake mix
  3               cups  rhubarb -- cut up
  1            package  strawberry Jell-O
  1                cup  sugar

Prepare cake mix as directed. Pour into greased 9x13-inch pan.

Mix sugar, Jell-O and rhubarb. Spoon over top of cake batter.

Bake at 350 degrees F. for 45 minutes.

Note : Comes out like upside-down cake.

  3        tablespoons  water
  2        tablespoons  tomato paste
  1         tablespoon  oil
  1             packet  Splenda
     1/4      teaspoon  chili powder
     1/8      teaspoon  garlic powder
     1/8      teaspoon  cumin
     1/8      teaspoon  onion powder
     1/8      teaspoon  salt
    1/16      teaspoon  Cayenne pepper

Mix all together and then microwave for 20 seconds on 50% power.

Use on your cooked shredded chicken, beef or pork.

Some might find the packet of Splenda to be too sweet. You could try
starting with 1/4 packet and add until the taste is right for you.

                          Evelyn's Rhubarb Cake

  1 1/2           cups  brown sugar
  1 1/2           cups  shortening
  1              large  egg
  1           teaspoon  vanilla
  1                cup  buttermilk
  1           teaspoon  soda
     1/2      teaspoon  salt
  2               cups  flour
  3               cups  rhubarb -- chopped
                        
                        Topping:
  1           teaspoon  cinnamon
     1/2           cup  chopped nuts
     1/2           cup  white sugar

Cake :  Mix all together. Place in a well-greased 9x13-inch pan.

Topping :  Mix together and sprinkle on top.

Bake at 350F. for 35-40 minutes.
