                        Oat Pecan Praline Cookies

  1 1/4           cups  firmly packed brown sugar
     1/2         pound  butter or margarine -- softened (2 sticks)
  2                     eggs
  2        tablespoons  molasses
  1           teaspoon  maple extract
  1 1/4           cups  flour
  1           teaspoon  baking soda
  2 1/2           cups  oats -- quick cooking
                        or old fashioned
  1                cup  pecans -- coarsely chopped
     3/4           cup  pecan halves -- about 48 halves

In a large bowl, beat sugar and butter until creamy. Add eggs, molasses and
maple extract; beat well. Add combined flour and baking soda; mix well. Add
oats and chopped pecans; mix well. Cover; chill at least 1 hour.

Heat oven to 350 degrees F. Lightly grease cookie sheets.

Shape dough into 1-inch balls. Place 3 inches apart on cookie sheets.
Flatten each ball by pressing a pecan half in the center.

Bake 10 to 12 minutes or until cookies are a nice golden brown. Immediately
remove to wire racks. Cool completely. Store in container with tight
fitting lid.

Yield :  About 4 dozen cookies

                 Oatmeal Chocolate Chip Cookies by Jennie

     1/2           cup  shortening
     1/2           cup  sugar
     1/2           cup  brown sugar
     1/2      teaspoon  vanilla
  1                     egg
  1         tablespoon  water
  1                cup  flour
     1/2      teaspoon  baking soda
     1/2      teaspoon  salt
  1                cup  oatmeal
  4               cups  chocolate chips
  2               cups  raisins

Cream shortening and sugars, add vanilla, mix egg with water and add to
creamed mixture. Stir in flour, soda and salt. Add oats, chocolate chips
and raisins. Drop by teaspoon on greased cookie sheet; bake in 350F. oven
for 10 minutes.

NOTE :  These cookies are very heavily laden with chocolate chips - do NOT
over mix or they will be chocolate cookies. Do NOT over bake.

                       Oatmeal Refrigerator Cookies

     1/2           cup  butter or margarine
     1/2           cup  sugar
     1/2           cup  firmly packed brown sugar
  1              large  egg
     1/2    tablespoon  grated lemon rind -- yellow color only
  1 1/2    tablespoons  molasses
     1/2      teaspoon  vanilla extract
     3/4           cup  sifted flour -- plus
  2        tablespoons  sifted flour
     1/2      teaspoon  baking soda
     1/2      teaspoon  salt
  1 1/2           cups  rolled oats -- uncooked

Combine butter and sugars in mixing bowl. Add egg, lemon rind, molasses and
vanilla. Mix well.

Sift together flour, baking soda and salt. Add oats. Combine the two
mixtures. Dough will be sticky.

Lay out sheet of waxed paper and lightly dust with flour. With floured
hands, shape dough into a roll about 5 inches by 2 1/2 inches on waxed
paper. Enclose dough in waxed paper, then put in zippered freezer bag.
Freeze well.

When ready to use, preheat oven to 375 degrees F.

Slice into thin slices, between 1/8- and 1/4-inch thick. Place on lightly
greased cookie sheets, 1 to 2 inches apart.

Bake in preheated oven 8 to 10 minutes or until golden brown. Let cool 1
minute before transferring to cooling racks to cool completely. Store in
container with tight fitting lid.

Yield :  20 to 24 cookies.

                           Orange Cake by Patty

  1            package  yellow cake mix -- standard size
  1            package  orange Jell-o mix -- regular size
     3/4           cup  apricot nectar
     2/3           cup  canola oil
  2          teaspoons  orange extract
  4              large  eggs -- beaten
                        Icing:
  1 1/2           cups  powdered sugar
  3        tablespoons  orange juice

Mix the first four ingredients and beat 3 minutes on medium speed of mixer.

Add the orange extract and beaten eggs. Mix well.

Pour into a tube pan you have greased and floured.

Bake at 325 degrees F. for 1 hour.

When done, punch holes in cake with ice pick or big meat fork tines; pour
icing over cake.  Cool.

Yield :  10 to 12 servings

                Orange Marmalade Cookies with Orange Icing

                        FOR COOKIES
     1/2           cup  butter
  1                cup  granulated sugar
  2                     eggs -- well beaten
  3               cups  flour -- sifted
     1/2      teaspoon  baking soda
     1/2      teaspoon  salt
  1                cup  thick orange marmalade
                        ORANGE ICING
     1/4           cup  orange juice
  1           teaspoon  lemon juice
  2          teaspoons  orange peel -- grated
  1           teaspoon  lemon peel -- grated
  3        tablespoons  butter -- softened
  3               cups  confectioner's sugar
     1/8      teaspoon  salt

Cream butter. Add sugar and continue beating until light and fluffy. Mix in
eggs. Beat in flour, soda and salt. Add marmalade and blend. Drop by
teaspoonfuls 1 inch apart on a well-buttered cookie sheet. Bake at 350
degrees F. for 10 to 12 minutes. Remove and cool. Cover with Orange Icing.

For Orange Icing: Mix juices and peels. Cream butter and sugar. Mix the two
together and blend until smooth. Add in salt and mix until spreading
consistency.

                    Orange Marmalade Cream Cheese Bars

     3/4           cup  butter -- softened
     3/4           cup  sugar
     1/4      teaspoon  salt
  2               cups  flour
  1 1/3           cups  chopped pecans -- toasted
  12            ounces  cream cheese -- softened
  2                     eggs
  1           teaspoon  vanilla
  1 1/2           cups  orange marmalade

Preheat oven to 350F. Butter a 9x13-inch pan.

Beat together butter, sugar and salt until light and fluffy. Add flour 1/2
cup at a time and mix until well blended. Stir in 1 cup of the nuts
(mixture will be crumbly).

Place 1 cup of mixture in small bowl and add remaining 1/3 cup nuts. Set
aside for topping.

Press remaining mixture over bottom of buttered pan. Bake 15 minutes. Cool.

Beat cream cheese in large mixing bowl until smooth. Add eggs one at a
time, beating well after each addition. Stir in vanilla and 3/4 cup of the
marmalade.

Spread cooled cookie base with remaining 3/4 cup marmalade. Pour cream
cheese mixture over top, spreading evenly. Top with reserved nut mixture.

Bake 20-25 minutes or until center looks set. Cool to room temp in pan on
rack. Cover and refrigerate 3 hours.

Cut into 24 squares.

Refrigerate airtight up to 5 days.

                          Orange-Marmalade Drops

     1/3           cup  butter -- beat until soft
     2/3           cup  granulated sugar
  1              whole  egg
  6        tablespoons  tart orange marmalade
  1 1/2           cups  all-purpose flour
  1 1/4      teaspoons  double-acting baking powder

Preheat oven to 375 degrees F.

Beat the butter until soft. Add the sugar gradually. Blend these
ingredients until light and creamy.
Beat in the egg and the marmalade.

Sift the flour then resift with the baking powder.
Stir sifted ingredients into the butter mixture.

Drop batter from a teaspoon, well apart, on a greased sheet. Bake the
cookies for about 8 minutes.

It is difficult to prescribe the right amount of flour, as marmalade
differ a great deal in consistency. Follow the rule, then try out 1 or 2
cookies. If they are too dry, add a little more marmalade, if too moist, a
little more flour and some grated lemon rind.

About 48 (2-inch) cookies
