Yam Brulee

10 cups peeled yam chunks -- (2.5 L)
3/4 cup whole milk -- (175 mL)
1/4 cup butter -- cubed (50 mL)
3/4 teaspoon salt -- (3 mL)
3/4 teaspoon cinnamon -- (3 mL)
1/4 teaspoon cayenne pepper -- (1 mL)
1/4 teaspoon freshly grated nutmeg -- (1 mL)
1/2 cup packed golden brown sugar -- (125 mL)
Cook the yams in boiling water for about 20 minutes or until tender; drain
thoroughly. Puree the yams in a food processor, in batches if necessary.
Transfer the puree to a bowl. Stir in the milk, butter, salt, cinnamon,
cayenne pepper and nutmeg; mix until the butter is melted.
Spoon the mixture into a greased 2-quart (2 liter) baking dish.
Cover with foil and refrigerate for up to 24 hours.
Bake, still covered with the foil, at 350F (180C) for 30 minutes or until
heated through.
Uncover, sprinkle the brown sugar evenly over the top.
Broil 4 to 5 minutes or until the sugar is melted and bubbly.
Serves 8 to 10.
