  1                cup  EAGLE BRAND®® Sweetened Condensed Milk
                        [NOT evaporated milk]
  1                cup  heavy cream
     1/2           cup  lime juice

Place ingredients in bowl; whisk thoroughly. Pour mixture into ice cream
freezer container. Freeze according to manufacturer's instructions. Store
prepared ice cream in freezer.

Tip : Pre-chill ingredients before preparation.

                       Fluffy Lemon Tapioca Pudding

  1              large  egg
  2 3/4           cups  milk
  3        tablespoons  quick-cooking tapioca -- (Minute Tapioca)
     1/8      teaspoon  salt
     1/2      teaspoon  pure vanilla extract
                        Grated rind of 1/2 lemon
  3        tablespoons  granulated sugar

In medium-size saucepan, beat egg with milk; stir in tapioca and salt. Let
stand 5 minutes. Cook, stirring constantly, 5-8 minutes until mixture comes
to a full rolling boil. Remove from heat. Stir in vanilla, lemon rind and
sugar; cool. Spoon into 6 sherbet glasses, dividing evenly. Serve warm or
chilled.

                      Foolproof Dark Chocolate Fudge

  3               cups  Hershey's® Semi-Sweet Chocolate Chips
                        or see below
  14            ounces  sweetened condensed milk -- (1 can)
                        {not evaporated milk}
  1               dash  salt
     1/2           cup  chopped walnuts -- (1/2 to 1 cup)
  1 1/2      teaspoons  vanilla extract

1. Line 8 or 9-inch square pan with foil.

2. In heavy saucepan over low heat, melt chocolate chips with sweetened
condensed milk and salt. Remove from heat; stir in walnuts and vanilla.
Spread evenly into prepared pan.

3. Refrigerate 2 hours, or until firm. Remove from pan; place on cutting
board. Peel off foil; cut into small squares. Store loosely covered at room
temperature.

* YIELD: About 5 dozen pieces or 2 pounds

Variation : can use 12 ounces chocolate chips and 6 ounces peanut butter
chips instead of all chocolate chips.

     1/2           cup  whipping cream -- (125 mL)
  1                     cinnamon stick -- (3 inches/7.5 cm)
  1              piece  orange peel -- (wide strip)
  1 1/4           cups  sweetened condensed milk -- (1 can/300 mL)
                        [not evaporated milk]
  2        tablespoons  vodka -- (25 mL)
  1 1/2      teaspoons  hot pepper sauce -- (7 mL)
  1           teaspoon  vanilla -- (5 mL)
  2               cups  whipping cream -- whipped (500 mL)
                        Coffee liqueur -- optional

Combine 1/2 cup (125 mL) whipping cream, the cinnamon stick and the orange
peel in a small saucepan. Bring to a boil; reduce heat and simmer for 5
minutes.  Remove from heat; cover and cool to room temperature.

Strain the mixture into a large bowl.
Stir in condensed milk, vodka, hot pepper sauce and vanilla.
Gently fold in the whipped cream.

Cover and freeze until firm.
May be frozen for up to 1 week.

To serve, scoop into wine goblets or fancy sherbet glasses.

Drizzle with coffee liqueur if desired.

Serves 8.

                       French Onion Soup with Coke

     1/4           cup  butter or margarine
  4               cups  onions -- thinly sliced
  21            ounces  beef broth -- or bouillon
                        [two 10 1/2-ounce cans]
     3/4           cup  Coca-Cola
  1           teaspoon  salt
     1/2      teaspoon  vinegar
     1/8      teaspoon  pepper
                        French bread -- cut into
  1              thick  slices
                        Parmesan cheese -- grated

Melt the butter/margarine in a saucepan; add onions and cook until golden
in color (do not brown).  Add beef broth, 1 soup can of water, Coca-Cola, 
salt, vinegar and pepper.  Cover and let simmer for about 25 minutes.

Toast one side of French bread slices under a hot broiler. Turn slices over, 
sprinkle Parmesan cheese on generously; toast until browned.

Ladle the soup into deep bowls and top with toast, cheese side up.

Serves 4.

                           Frozen Lemon Mousse

  2        tablespoons  cornstarch
     1/4      teaspoon  salt
  1                cup  granulated sugar
  1                cup  milk
  3              large  egg yolks -- slightly beaten
     1/2           cup  lemon juice
                        grated rind of 1 lemon
  2 1/2           cups  cream -- whipped

In top of double boiler, mix together cornstarch, salt and sugar; add milk;
mix well. Cook over boiling water about 15 minutes, stirring occasionally.
Slowly pour hot milk mixture over egg yolks, stirring constantly. Mix well.
Return to double boiler. Cook over simmering water 1 minute. Add lemon
juice and rind; remove from heat. Chill. Fold in whipped cream; pour into
freezer trays. Freeze until firm.
