               Double Chocolate Peanut Brittle (Microwave)

Recipe By :
Serving Size : Preparation Time :0:00
Categories : Volume 7-12 Dec 2004

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
  1 cup sugar
  1 1/4 cups salted peanuts
     1/2 cup light corn syrup
  3 tablespoons cocoa
  1 teaspoon margarine
  1 teaspoon vanilla extract
  1 teaspoon baking soda
     1/2 cup chocolate chips

1. Lightly grease large cookie sheet; set aside.

2. In 2-quart glass casserole, combine sugar and corn syrup. Cook on high
4 minutes. With wooden spoon, stir in peanuts. Cook on high 3-5 minutes,
until peanuts are lightly browned (I found in my Microwave 3 1/2 minutes
worked).

3. Stir in cocoa, butter and vanilla. Cook on high 2 minutes or to hard
crack stage (when a small amount dropped into very cold water forms hard
and brittle threads.

4. Blend in baking soda and stir until mixture is foamy. Immediately pour
onto cookie sheet and spread in 1/4-inch thickness.

5. Sprinkle hot brittle with chocolate pieces. As pieces begin to melt,
spread chocolate evenly over candy. Refrigerate until set. Break into
pieces.
