* Exported from MasterCook * Ohio Sour Cherry Pie Recipe By : Public domain recipes converted from Meal Master format Serving Size : 6 Preparation Time :0:00 Categories : Volume 7-10 Oct 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 cups all-purpose flour 1/2 teaspoon salt 5 ounces shortening -- (Crisco), frozen 1/3 cup ice water 1/3 cup brown sugar 1/3 cup white sugar 1/2 teaspoon cinnamon 4 tablespoons cornstarch 1 1/2 cups cherry juice 3 pounds frozen tart cherries -- (with sugar) 1 1/2 tablespoons shortening -- (Crisco) 1 teaspoon almond extract 1 tablespoon vanilla extract 1/2 tablespoon milk 2 teaspoons sugar For Crisco crust, combine flour and salt in food processor. Cut frozen Crisco shortening into chunks with knife and add to food processor. Process (pulse) until mixture forms fine crumbs. Add ice water while the machine is running and continue to run processor until dough forms on the blades. Remove and form dough into two balls. Cover and refrigerate for 30 minutes. Preheat oven to 425 degrees F. For Sour Cherry Filling, combine brown and white sugars, cinnamon and cornstarch in saucepan. Add cherry juice and cook until mixture is thick and bubbly. Stir and boil the mixture for one minute. Add cherries and cook for one minute or until it starts to boil again. Remove from heat and add Crisco shortening and almond and vanilla extracts. Remove refrigerated dough. On lightly floured surface, roll bottom crust into circle 1/8-inch thick and about 1 1/2 inches larger than inverted pie plate. Gently, ease dough into the pie plate, being careful not to stretch the dough. Trim edge even with pie plate. Spoon cherry filling into prepared pastry. Roll top crust the same way as the bottom. Brush top crust with milk and sprinkle lightly with sugar. Bake at 425 degrees F. for 15 minutes. Reduce temperature to 350 degrees F. and continue baking for 25 minutes or until crust is golden brown. Serves 6 to 8. Stir constantly until a small amount forms a hard ball in cold water. Remove from heat. Add the 3 tablespoons of margarine and 1 teaspoon of vanilla Stir thoroughly. Pour evenly over . Mix well. Exchanges: 0 Fat; 1/2 Other Carbohydrates. * Exported from MasterCook * Onion Pie (Hallie's) Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Volume 7-10 Oct 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 9 inch pastry shell -- unbaked or your own favourite pastry 1 recipe for a single crust pie 1 tablespoon butter -- (or margarine) (15 mL) 1 tablespoon cooking oil -- (15 mL) 2 cups thinly sliced onion -- (500 mL) 2 large eggs 1/2 cup canned milk -- (125 mL) 1/2 cup 2% milk -- (125 mL) 1/2 teaspoon salt -- (2 mL) 1 pinch Cayenne pepper or your favourite hot pepper powder 1 hot Hungarian pepper -- minced or your favourite hot pepper 2 cups finely shredded old Cheddar cheese -- (500 mL) Preheat the oven to 350F (180C). Heat the butter and oil in a frying pan. Add the thinly sliced onion and minced hot pepper; saute just until the onion is translucent but not browned. Transfer to the pie shell. Beat the eggs; add the milk, salt and Cayenne. Mix well then pour over the onion. Evenly distribute the shredded cheese over the top. Bake about 45 minutes or until it tests done (insert a knife into the center; if it comes out clean and not coated with the custard mixture it is done). Makes 6 servings. MC format by Hallie.
