3/4 cup dry bread crumbs
3/4 cup shredded parmesan cheese
1/2 cup flour
1/4 cup dried parsley flakes
3 tablespoons cornmeal
1 tablespoon dried minced onion
3/4 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons shortening
Combine first 10 ingredients in a bowl; cut in shortening until mixture
resembles small crumbs. Store in air-tight container in a cool dry place
or freeze for up to 6 months.
Yield : 6 batches or maybe not, depending on how much meat you are
breading.
Dip meat such as chicken, pork chops or fish in an egg, milk wash. Have
mix in a shallow container. Lay a piece of meat on crumbs and press crumbs
into meat, turn and repeat on other side.
Place meat in a 13x9x2-inch baking dish or pan you have sprayed with non-stick
coating. Bake uncovered in 400 degree F. oven 40-45 minutes, turning once
halfway through cooking time.
You can also use this breading mixture for fried foods.
