                 Oatmeal Chocolate Chip Cookies in a Jar

  1                cup  all-purpose flour
     1/2      teaspoon  baking powder
     1/2      teaspoon  baking soda
  1 1/4           cups  rolled oats
  1                     chocolate bar -- (2.6 ounce)
     1/2           cup  white sugar
     1/2           cup  brown sugar
     1/2           cup  chopped nuts
     1/2           cup  semisweet chocolate chips

With wire whisk, mix flour, baking powder and baking soda. Pour into jar,
pack down level with heavy object.
Mix oatmeal in a blender.
Grate chocolate bar and mix into the oatmeal. Pack on top of flour in jar.
Add white sugar and pack down.
Add brown sugar and pack down.
Layer chopped nuts on top of brown sugar.
Finish layering jar with mini or regular chocolate chips until even with
the top (no more than 1/2 cup).

Print out the following directions to attach to the jar:

Preheat oven to 375 degrees F. (190 degrees C).
Spoon chocolate chips and nuts into small bowl, set aside.
Spoon brown and white sugar into mixing bowl; add 1/2 cup margarine or
butter; cream well.
Add 1 egg and 1/2 teaspoon vanilla; mix well.
Pour oatmeal and flour mixture from jar into bowl, mix thoroughly.
Roll into walnut size balls; place on slightly greased cookie sheet 2
inches apart.
Bake for 8 to 10 minutes.

INGREDIENTS : flour, oatmeal, brown and white sugars, soda, baking powder,
grated chocolate, chocolate chips, nuts.

Makes 3 dozen

     3/4           cup  packed brown sugar
     1/2           cup  white sugar
     3/4           cup  raisins
  2               cups  rolled oats
  1                cup  all-purpose flour
  1           teaspoon  ground cinnamon
     1/2      teaspoon  ground nutmeg
  1           teaspoon  baking soda
     1/2      teaspoon  salt

Mix together flour, ground cinnamon, ground nutmeg, baking soda and salt.
Set aside. Layer ingredients in order given in a 1-quart "wide mouth"
canning jar. It will be a tight fit, make sure you firmly pack down each
layer in place before adding the flour mixture.

Instructions to attach to jar:

Oatmeal Raisin Spice Cookies

Empty jar of cookie mix into large mixing bowl. Use your hands to
thoroughly blend mix.

Add 3/4 cup butter or margarine softened at room temperature. Stir in one
egg, slightly beaten. Add in 1 teaspoon of vanilla.

Mix until completely blended. You may need to finish mixing with your
hands.

Shape into balls the size of walnuts. Place on a parchment-lined cookie
sheet 2 inches apart. DO NOT USE WAXED PAPER.

Bake at 350 degrees F (175 degrees C) for 11 to 13 minutes until edges are
lightly browned. Cool 5 minutes on baking sheet. Remove cookies to baking
racks to finish cooling.

Makes 3 dozen cookies.

     1/2           cup  suet
  20                    green tomatoes -- cored
  18                    tart apples -- peeled
  1 1/2         pounds  raisins
  3        tablespoons  cinnamon
     3/4           cup  any sweet fruit juice
     3/4           cup  minced citron
  6        tablespoons  orange rind
  3          teaspoons  salt
  1         tablespoon  cloves
  1 1/2      teaspoons  allspice
  1           teaspoon  ginger
  1                cup  beef stock
                        Brandy -- if desired
     1/2      teaspoon  nutmeg -- (1/2 to 1)

Cover meat with water and simmer until tender.

Force meat, suet, tomatoes and apples through coarse food chopper.

Add remaining ingredients (except brandy) and simmer 1 hour, stirring
frequently.

Fill 3 hot, sterilized 1 quart jars. Place 2 tablespoons brandy on top, if
desired. Seal. Store in cool place.

                          Onion Crunch Potatoes

  4              large  russet potatoes -- scrubbed and
                        cut into 1/4-inch thick slices
  1         tablespoon  butter -- melted
  1           teaspoon  bottled minced garlic
  1           teaspoon  coarsely ground black pepper
  1           teaspoon  dried thyme -- crushed
  1           teaspoon  salt
  2              large  eggs
     1/4           cup  milk
  1                cup  bread crumbs -- toast bread and
                        tear up
  1           teaspoon  dried Italian seasoning
  1              large  onion -- cut
                        into 1/4-inch thick rings

Heat oven to 450 degrees F.

Arrange potatoes, overlapping, in greased 13x9x2-inch baking pan or dish.
Brush butter over them. Sprinkle potatoes with garlic, dry thyme and
pepper.

Whisk eggs and milk together.

On waxed paper, combine bread crumbs and Italian spices.

Dip onion rings in egg wash, drain off excess, then coat in bread crumb
mixture. Arrange onion rings in single layer over potatoes.

Bake in 450-degree F. oven 30 minutes covered and 15 minutes uncovered or
until browned and crisp and potatoes are tender when tested with fork.

Serves 4 to 6.

                           Onion Pinwheel Rolls

  1              large  sweet onion -- like Vidalia
  2        tablespoons  butter
  1                cup  chopped steamed spinach -- drained dry,
  1            squeeze  it if you have to
     1/4           cup  shredded Parmesan cheese
  1           teaspoon  salt -- divided
  1               dash  Cayenne pepper
  2               cups  sifted flour
  3          teaspoons  baking powder
     1/4           cup  Crisco shortening
     2/3           cup  whole milk
  1                     egg -- beaten
     1/3           cup  evaporated milk -- undiluted

Peel and slice onions, saute in butter until golden, cool. Add spinach,
Parmesan cheese, 1/2 teaspoon salt and dash of Cayenne pepper.

Sift flour, baking powder and remaining 1/2 teaspoon salt together. Cut in
shortening, using 2 table knives, in scissor fashion. Add milk; mix only
enough to moisten dry ingredients.

Flour lightly a board to roll dough out on. Roll dough into a 12x8-inch
rectangle. Spread with onion mixture to within a inch of edges of dough.
Roll up like a jelly roll, pinch seam to seal, pinch ends to seal. Cut into
10 slices. Place flat in a greased 9-inch baking dish.

Mix egg and evaporated milk together, pour over the rolls.

Bake on middle rack of oven at 400 degrees F. for 25 minutes or until
golden.

These are tasty and different.

                      Orange Slice Cookies in a Jar

     1/2           cup  firmly packed Dark brown sugar
  1 3/4           cups  flour -- mixed with
  1           teaspoon  baking powder -- and
     1/2      teaspoon  baking soda
  1 1/2           cups  orange slice candies -- quartered
                        [10-ounce package]

Layer ingredients in order given in a quart sized wide mouth canning
jar. Press each layer firmly in place. It will be a tight fit.

Attach to jar:

Orange Slice Cookies

1. Remove orange slice candy from jar. Set aside.

2 Empty remaining cookie mix into large mixing bowl. Use your hands to
thoroughly blend mix.

3. ADD: 1 stick butter or margarine, softened at room temperature. DO NOT USE
DIET MARGARINE, 1 egg slightly beaten, 1 teaspoon vanilla.

4. Mix until completely blended. You may need to finish mixing with your
hands.

5. Mix in orange slice candy.

6. Shape into large sized balls. Place 2 inches apart on sprayed baking
sheets.

7. Bake at 375F for 12 to 14 minutes until edges are lightly browned.
Cool 5 minutes on baking sheet. Remove cookies to racks to finish
cooling.

Makes 2 1/2 dozen cookies.
