* Exported from MasterCook * Oatmeal Chocolate Chip Cookies Recipe By : Jennie Bartlett Serving Size : 36 Preparation Time :0:00 Categories : Volume 7-08 Aug 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup shortening 1/2 cup sugar 1/2 cup brown sugar 1/2 teaspoon vanilla 1 egg 1 tablespoon water 1 cup flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup oatmeal 1 package chocolate chips 1/2 cup walnuts Cream shortening and sugars; add vanilla, mix egg with water and add to creamed mixture. Stir in flour, soda and salt. Add oats, chocolate chips and walnuts. Drop by teaspoon on greased cookie sheet, bake in 350F. oven for 10 minutes. Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 1 Fat; 1/2 Other Carbohydrates. * Exported from MasterCook * Oatmeal Cookies with Molasses Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Volume 7-08 Aug 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup soft shortening -- do not use butter or margarine 1 1/4 cups sugar 2 eggs 1/3 cup molasses 1 3/4 cups flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon 2 cups Old Fashioned Oats 1/2 cup nuts -- optional 1 1/2 cups raisins Beat together shortening, sugar, eggs and molasses. Stir together flour, salt baking soda and cinnamon and blend in with sugar mixture. Stir in oats, nuts and raisins. Lightly grease a cookie sheet and drop by rounded teaspoons about 2 inches apart. Bake at 400F. for 8-10 minutes until very lightly browned. (If they brown to fast bake at 375F. Watch them carefully.) These cookies are actually better when they are a few days old. Using an electric mixer, beat butter and sugar together in a medium mixing owl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in Craisins and white chocolate chips. Drop by teaspoonfuls onto ungreased cookie sheet. Bake for 10-12 minutes or until golden brown. Cool on a wire rack.
