Death by Chocolate Upside Down Cake

1 cup flaked coconut
1 cup chopped pecans
1 package German Chocolate Cake mix
1/3 cup vegetable oil
1 1/4 cup water
3 eggs
3/4 cup chocolate chips -- (3/4 to 1 cup)
3 1/2 cups confectioners' sugar -- (about 1 pound)
1 cup margarine -- melted (2 sticks)
8 ounces cream cheese -- softened
The frosting goes through the cake batter and ends up on the bottom of
the pan...
Preheat oven to 375F. Grease a 13x9-inch pan. Sprinkle coconut and pecans
evenly over bottom of greased pan.
In a large bowl, mix the cake mix, oil, water and eggs with electric mixer
on low speed until moistened. Beat 2 minutes at high speed. Stir in
chocolate chips. Spoon the batter over the coconut-pecan layer.
In another bowl, combine margarine and cream cheese, beat with mixer on low
speed until well mixed. Add confectioners' sugar in small amounts, beating
well after each addition, until smooth and creamy. Spoon this mixture over
the cake batter to within 1" of the edges. Bake the cake 40-45 minutes or
until a tester inserted in the center shows that it is done. Cool slightly
5 minutes.
You can serve it by either cutting in squares and scooping frosting off the
bottom to top each serving OR you can turn the entire pan upside down on a
board or tray. Spread the top of the cake with any frosting remaining in
the pan.
