                     Waldorf Astoria $300.00 Red Cake

  1 1/2           cups  sugar
     1/2           cup  shortening
  2                     eggs
  2             ounces  red food coloring
  2          teaspoons  unsweetened cocoa
  1           teaspoon  salt
  1                cup  buttermilk
  2 1/4           cups  cake flour
  1           teaspoon  vanilla
  1           teaspoon  baking soda
  1           teaspoon  white vinegar
                        FROSTING:
  3        tablespoons  flour
  1                cup  milk
  1                cup  sugar
  1                cup  butter
  1           teaspoon  vanilla

Cream together sugar, shortening and eggs.

Make a paste with the red food coloring and cocoa; add to sugar mixture.

Mix salt and buttermilk to sugar mixture; alternating with cake flour and
vanilla. Add baking soda and vinegar.

Pour cake batter into 2 (8 or 9-inch) cake pans you've sprayed with non-
stick coating.

Bake in 350 degree F. oven about 35 minutes or until toothpick inserted
near center comes out clean. Cool cake 10 minutes before removing from pans
to racks to cool completely.

FROSTING

In a saucepan, cook flour and milk until thick: cool. Whisk or stir flour
and milk constantly while thickening.

In mixing bowl, cream sugar, butter and vanilla until fluffy. Start out on
low speed and work up to medium speed of mixer. Combine milk and flour
mixture with sugar mixture and blend well.

Split cakes into 4 layers. Put frosting on tops of layers only. Stack the
layers for the finished cake.

Serves 12.

  1              pound  ground beef
     1/2           cup  chopped onion
  8             ounces  tomato sauce -- (1 can)
     1/4      teaspoon  garlic powder
     1/2      teaspoon  salt
     1/8      teaspoon  pepper
  1                can  whole kernel corn -- drained
  1 1/2           cups  water
     3/4           cup  milk
  2               cups  mashed potatoes -- (2 to 3 cups)
  1                can  chopped green chiles
  2               cups  shredded cheddar cheese
  1             medium  tomato -- chopped

Spray a 12x8x2-inch shallow baking dish with non-stick spray.

In a large skillet, brown meat and onion; drain well. Stir in tomato sauce,
garlic powder, salt and pepper. Spoon corn evenly over meat mixture.

Mix potatoes and green chiles together, "add a little onion powder to
this," and the chopped tomato. Spread over the corn layer.

Bake at 350 degrees F. for 35 to 40 minutes or until bubbly. Let stand 5
minutes before serving.

Serves 4 to 6

                            Western Meat Dish

  4             slices  bacon
  4                     potatoes -- thinly sliced
  1              pound  hamburger
  1                     onion -- chopped
  2        tablespoons  butter
  1                can  spaghetti sauce -- (with meat)

Fry the bacon until crisp. Remove from pan and add potato slices. Cook
until tender. Place bacon and potatoes in casserole. Brown the hamburger
with one chopped onion in 2 tablespoons butter in the same frying pan.
Add this to the potatoes. Top with spaghetti sauce and bake uncovered in
350F. oven for 20 minutes. Stir mixture a little after 20 minutes and
cover. Bake for an additional 25 minutes or until potatoes are tender
and casserole is bubbling.

                  White Chocolate Tiramisu with Berries

     3/4           cup  Grand Marnier -- approximately
     1/3           cup  granulated white sugar
  28            ounces  ladyfingers -- (4 packages)
                        FILLING:
  12            ounces  white chocolate -- chopped
     1/2           cup  whipping cream
  1 1/2         pounds  light cream cheese
  6        tablespoons  nonfat sour cream
  6        tablespoons  granulated white sugar
  2          teaspoons  vanilla
  3              pints  fresh berries -- cleaned
                        strawberries, blueberries or raspberries
                        --
                        (strawberries sliced) [a mixture of these
                        is pretty]

For a 10-serving scale use a 10-inch springform pan.

Melt chocolate with whipping cream in small heavy saucepan over low heat.
Stir until smooth. Cool mixture to room temperature.

In bowl, whisk cream cheese with sour cream and chocolate mixture. Set aside.

Pour Grand Marnier into a shallow bowl. Pour first measure of sugar onto
a small plate. Trim a ladyfinger to height of the rim of a springform pan.
Quickly dip the cookie into the liqueur, turning to coat lightly. Dip one
side into sugar. Place cookie rounded side up with the sugared side
against the side of the pan. Repeat with as many ladyfingers as needed to
cover sides of pan. For bottom of pan, dip cookies in Grand Marnier only,
omitting sugar. Trim to fit.

Spoon half of the cheese and chocolate mixture into pan, smooth the top.
Sprinkle with half of the mixed berries. Top with more dipped ladyfingers,
covering berries completely and trimming to fit. Follow with remaining
cheese mixture. Top dessert with remaining berries. Cover; chill at least
6 hours, or overnight. Release pan sides and transfer cake to a serving
platter. Garnish with white chocolate curls, if desired.

NOTES : Reduced fat version of cool, creamy tiramisu lightened with white
chocolate and fresh berries.
