* Exported from MasterCook * Very Cherry-Stuffed French Toast Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Volume 7-07 July 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 eggs 1/4 cup evaporated milk 1 teaspoon vanilla extract 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon salt 12 slices dry white bread 8 ounces cream cheese -- softened 21 ounces cherry pie filling 2 tablespoons butter Powdered sugar Maple syrup -- optional In a large mixing bowl, beat together eggs, milk, vanilla, cinnamon, nutmeg and salt; set aside. Spread each slice of the bread with some cream cheese. Top six of the slices with cherry pie filling, spreading almost to edges. Cover each with remaining bread slices, cream cheese side down. Dip carefully in beaten egg mixture so you don't lose the filling. In a large non-stick skillet or griddle, cook the sandwiches in hot butter with a little oil so butter won't burn, over medium heat 2 to 3 minutes on each side or until golden brown. Cut filled French toast into halves and sprinkle with powdered sugar. If you don't want to use syrup on the stuffed toast, place a big dollop of Cool Whip or Redi-Whip on top. Serves 6.
