                           Quiche Italian Style

  1             9 inch  unbaked pie pastry shell
  1              pound  sweet Italian sausage
                        or mild Italian sausage -- remove from casing
  2          teaspoons  Worcestershire sauce
     1/2      teaspoon  allspice
     3/4      teaspoon  salt
     1/8      teaspoon  garlic powder
     1/8      teaspoon  white pepper
     1/3           cup  chopped onions
     1/3           cup  chopped bell pepper
  1         tablespoon  oil
     1/2           cup  mayonnaise
     1/2           cup  milk
  2                     eggs -- beaten
  1         tablespoon  cornstarch
  1 1/2           cups  shredded Swiss cheese -- (1 1/2 to 2 cups)
                        or Monterey Jack cheese

Prick the bottom of your pastry shell all over with a fork.
Bake in 400-degree F. oven 10 minutes. Remove and cool.

Brown and drain meat, breaking meat up with edge of spoon while cooking.
Add seasonings and set aside.

Saute onion and bell pepper in oil. Add to meat.

Combine mayonnaise, milk, eggs and cornstarch then add to meat mixture.
Stir in half of the cheese. Blend together well.

Pour into pie shell you have cooled. Sprinkle with remaining cheese.

Bake on middle rack of oven at 375 degrees F. about 40 to 45 minutes or
until firm when knife edge is inserted near center of quiche.

Serves 6.

                         Quiche with Potato Crust

  3               cups  frozen hash brown potatoes
  1 1/2           cups  shredded cheddar cheese -- divided
  2        tablespoons  butter -- melted
  5              large  eggs
  1                cup  cooked ham -- cubed
     1/2           cup  cream
     1/2      teaspoon  salt
     1/4      teaspoon  pepper
     1/2      teaspoon  dry mustard
  1           teaspoon  dried chives
                        Hungarian paprika for garnish

Combine potatoes and 3/4 cup cheese. Pour melted butter over, add one
beaten egg and mix well. Press mixture into bottom and up sides of buttered
10-inch glass quiche pan or deep dish pie plate to form the crust.

Spread crust bottom with ham pieces. Layer remaining cheese over ham.

Mix the 4 eggs, salt, pepper, dry mustard and chives in blender at high
speed for 30 seconds. Immediately pour over prepared crust mixture.
Sprinkle with paprika for color.

Bake in 400 degree F. oven for 45-50 minutes. Remove from oven and allow to
rest 10 to 15 minutes.

Cut into 6 wedges.
Serve warm with sour cream if you like.
