  8             slices  white sandwich bread
  1              pound  Longhorn cheese -- grated
  8                     eggs
     3/4      teaspoon  salt
  3               cups  milk
     3/4      teaspoon  dry mustard
  1               dash  cayenne pepper
                        Green onions
                        Fresh mushrooms

Butter bread and cut into 1-inch cubes; place in greased 9 x 13-inch pan.
Sprinkle grated cheese over bread cubes. Top with a layer of sliced onions
and fresh mushrooms. Beat eggs, milk and spices together and pour over.

Refrigerate overnight, or at least 6 hours.

Bake, covered, at 350 degrees F. for 1 hour; uncover to brown.

Serves approximately 8.

                          Apple and Onion Quiche

  1                cup  flour
     1/3           cup  vegetable shortening
     1/2      teaspoon  salt
     1/4           cup  grapefruit soda -- such as Squirt
  1                cup  onion -- thinly sliced
  2        tablespoons  unsalted butter
  2               cups  apple -- peeled, cored,
                        sliced
     1/2           cup  grated Jack cheese
     1/2           cup  grated Gruyere cheese
  3                     egg -- beaten
  2        tablespoons  Chinese mustard
  1                cup  half and half
     1/2      teaspoon  kosher salt

Combine flour and salt in a large bowl. Add the shortening and rub into
flour with your hands, until well blended. Add grapefruit soda, 1
tablespoon at a time; toss with a fork. Continue to moisten and toss with a
fork just until dough holds shape. Wrap in plastic and chill thoroughly.
Roll out to desired shape and press into a quiche pan. Line with foil and
weight-down with beans. Bake at 400 degrees F. for 8 minutes. Remove from
heat, remove foil and beans; cool.

Combine onions and butter in a skillet; over a medium flame heat and stir
for 2-3 minutes, until slightly transparent. Add apples and continue to
saute until onions and apples have softened, without browning. Remove from
heat, cool.

Combine cheeses with apple mixture-mix well, set aside.

Combine eggs, mustard, half & half and kosher salt; mix well.

Arrange the apple mixture into prepared pastry shell. Pour egg mixture over
the top.

Bake at 375 degrees F. for 35-40 minutes, until set (cover crust with foil
if it begins to burn). Remove from heat and allow to rest briefly before
cutting.

Serve hot, warm or at room temperature.

                           Asparagus Ham Swirls

  16                    fresh asparagus spears -- trimmed
  3        tablespoons  Dijon mustard
  16            slices  fully cooked ham -- (thin slices)
  16            slices  Swiss cheese
  2                     eggs -- beaten
  1                cup  dry bread crumbs

In a skillet, cook asparagus in small amount of chicken broth, made from
instant granulated chicken bouillon and water, to crisp-tender stage; about
6-8 minutes. Drain well.

Spread about 1 teaspoon mustard on each slice of ham. Top slice of ham with
a slice of cheese. Place a spear of Asparagus in center of piece of cheese.

Roll up each ham slice tightly; secure with 3 toothpicks. Dip ham rolls in
beaten egg, then roll in bread crumbs to coat well.

In electric skillet, heat 1 inch of oil to 350 degrees F.

Fry rolls, a few at a time, until golden brown, 3-4 minutes. Drain on paper
towels.

Cut each roll between the toothpicks. Leave toothpicks in and serve hot as
appetizers.

Would be nice served with a hot cheese dip.

Yields 4 dozen.

                               Avocado Ice

  2                     ripe avocados -- (2 to 3)
     1/4          pint  mayonnaise -- (150 mL)
     1/4          pint  sour cream -- or yoghurt
                        [5 fl. oz./150 mL]
  1                     lemon -- juice of
  1           teaspoon  soya sauce -- (5 mL)
                        Salt
                        Freshly ground black pepper
  30                    fresh basil leaves -- approximately
                        Nasturtium flowers -- optional

Stone and peel the avocados; blend thoroughly with the mayonnaise, sour
cream (or yoghurt), lemon juice and soya sauce.

Season to taste with salt and pepper.

Stir in the torn basil leaves reserving a few for decoration if nasturtium
flowers are not used.

Pour the mixture into a 1-pint (600 mL) ring mould and freeze.

One hour before serving transfer to the refrigerator to let the ice soften.

Turn out and serve decorated with nasturtium flowers or basil leaves.

Serves 8 to 10.

Author's note: This is a savory ice, rather rich tasting and unusual. The
fragrant basil goes well with the bland taste of the avocado. Nasturtiums,
if used, add a peppery taste as well as a touch of colour.
