Italian Pork and Rice

1 cup sliced fresh mushrooms
1/3 cup chopped onion
1 teaspoon bottled minced garlic
1 tablespoon butter
14 1/2 ounces Italian Seasoned Tomatoes -- undrained (1 can)
1 cup small cube cooked pork -- 2 pork chops,
pork loin or even ground pork
1 cup frozen Birdseye Stir-fry Peppers -- chopped up
1 teaspoon Italian Seasoning
1/2 teaspoon salt
1 pinch sugar
1/2 cup uncooked instant rice
In a 3-quart saucepan, saute' mushrooms, onion and garlic in butter until
crisp-tender.
Stir in tomatoes, pork meat cubes, stir-fry peppers, Italian seasoning,
salt and sugar, bring to a boil. Stir in rice, cover and remove from heat.
Let stand 5 minutes. Stir before serving.
Yields three 1-cup servings.
