* Exported from MasterCook * Veal Scaloppini with Mushrooms Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Volume 7-05 May 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 veal cutlets -- (3-ounce slices) 1/2 cup flour 1 teaspoon Creole Seasoning 2 tablespoons olive oil 1/2 pound Portobello mushrooms -- sliced 1/4 pound ham -- thinly sliced 1/2 cup Marsala wine 1/2 cup chicken stock 4 slices Mozzarella cheese Sprinkle seasoning on meat, then melt oil in a large non-stick skillet. Dredge veal in flour and saute in oil for 2 minutes per side. Remove the meat from skillet. In the same skillet, add mushrooms and ham you have chopped up, cook and stir 2 minutes. Add wine and chicken broth, then boil mixture about 5 minutes or until it has reduced by half. Preheat oven to 350 degrees F. Place veal in a baking dish and put mushroom/ham mixture on top. Cover each slice with a slice of mozzarella cheese and bake in preheated oven 10 minutes or until cheese melts. Footnote : Boneless Chicken Breasts could be substituted for veal. Just flatten them out to about 1/8 inch thickness before preparing.
