* Exported from MasterCook * Jicama Strawberry Salad Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Volume 7-05 May 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups mixed greens 1 quart strawberries 1 cup alfalfa sprouts 2 cups jicama 6 kiwi fruit POPPY SEED DRESSING: 2 tablespoons oil 2 tablespoons honey 2 tablespoons orange juice 1 tablespoon vinegar 2 tablespoons poppy seed filling 2 teaspoons Dijon mustard 1 teaspoon orange extract Slice jicama very thin. Slice strawberries and kiwi. Mix strawberries, jicama and kiwi fruit. Arrange greens on each of eight plates, arrange fruit over and top with alfalfa sprouts. Pour dressing over and serve. Fold in Cool Whip. Fold in bananas, pineapple, nuts and maraschino cherry halves. Place in a lightly sprayed with non-stick spray, 13x9x2-inch dish. Cover tightly with foil. To serve, remove from freezer 10 minutes early. Cut into squares and serve on salad plate you have laid a pretty lettuce leaf on. Yields 12 to 16 servings. Footnote - Instead of Pineapple, a 16-ounce can of very well drained fruit cocktail may be used.
