                         Lemon Meltaways Cookies

  2 1/2           cups  Flour
  1                cup  Cornstarch
     2/3           cup  Powdered Sugar
  1 1/2           cups  Butter, softened*
  2               tsp.  grated Lemon Zest, color peel no white
  2              Tbsp.  Lemon Juice
                        
                        Frosting:
  1 1/2           cups  Powdered Sugar
     1/2           cup  Butter, softened
  2               tsp.  grated Lemon Zest
  2               tsp.  Lemon Juice

* Could use Buttered Flavored Crisco, but butter is better for these cookies.

In large bowl of mixer, combine all cookie ingredients.  Beat at low speed
scraping bowl often until well mixed 2-3 minutes.

Divide dough into fourths, shape each 4th into 8x1" roll; wrap in plastic
wrap or aluminum foil.  Refrigerate until firm 2 hours.

Heat oven to 350 degrees.  With sharp knife, slice each roll into 1/4"
slices.  Place 2" apart on cookie sheets.  Bake 8-10 minutes or until
cookies set.  They will not brown.  Cool completely on wire racks.

In small mixer bowl, combine all frosting ingredients.  Beat at medium
speed, scraping bowl often, until fluffy, 1-2 minutes.  Frost cool cookies.
Make sure frosting has set and dried before storing.

Yield:  8 dozen

                Lo-Carb Chicken and Sweet Pepper Stir-fry

  4             medium  boned skinless chicken breast halves
  3        tablespoons  soy sauce
  1         tablespoon  sherry wine
                        Non-stick spray
  1             medium  onion -- cut into wedges
  2             medium  bell peppers -- sliced
                        into 1/4-inch wide strips
  4             ounces  sliced mushrooms -- drained (1 can)
  1         tablespoon  olive oil
     1/4      teaspoon  ground ginger
  8             ounces  bamboo shoots -- drained (1 can)
     1/4           cup  chicken broth
  1           teaspoon  cornstarch

Cut chicken into bite sized pieces, place in bowl. Stir soy sauce and
sherry together and pour over chicken. Let stand 30 minutes.

Spray pan with non-stick spray. Heat over medium high heat, add onion,
stir-fry 2 minutes. Add bell peppers, stir-fry 2 minutes. Add drained
mushrooms and stir-fry 2 minutes. Remove vegetables from pan.

Drain chicken, reserve marinade. Add oil to pan. Add ginger, stir 15
seconds. Add chicken and stir-fry until done, about 6 minutes. Return
vegetables and bamboo shoots to pan. Push everything from center of pan.

Stir broth, 1/4 teaspoon pepper and cornstarch into reserved marinade. Add
to center of pan, cook and stir until slightly thickened. Toss to coat
chicken mixture.

Serves 4.  8 carbs per serving

                         Lo-carb Oven Fried Fish

  4                     fish fillets -- (about 1 pound)
                        Non-stick spray
  4        tablespoons  lo-carb bread crumbs
  3        tablespoons  corn meal
     1/4      teaspoon  celery salt
  1               dash  cayenne pepper
  1         tablespoon  cooking oil
  1                     egg -- slightly beaten
     1/4           cup  cream

Thaw fish, if frozen. Rinse fish off with cold water and pat dry with paper
towels. Measure thickness of fish.

Spray an 11x7x2-inch baking dish or pan with non-stick spray.

Stir together bread crumbs, corn meal, celery salt and red pepper.

Mix together egg and cream.

Dredge fish in egg mixture. Coat lightly with crumbs. Place in pan. Drizzle
oil over fish fillets lightly.

Bake uncovered in 500-degree-F. oven 6 to 8 minutes for every 1/2 inch of
thickness. When fish flakes it is done.

Serves 4.  8 carbs per serving
