1 2/3 cups Flour
3/4 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1/4 tsp. Nutmeg
3/4 stick Butter, softened
1/3 cup Sugar
3/4 cup packed Brown Sugar
1 cup mashed ripe Bananas
1 large Egg
1 tsp. Vanilla
2 cups (1-12oz. bag Chocolate Chips
1 cup Flaked Coconut
6 rings dried Pineapple, chopped
1/2 cup chopped Macadamia Nuts
Heat Oven to 375 degrees
Do not grease cookie sheets.
Sift dry ingredients onto piece of waxed paper. On medium speed of mixer in
large mixer bowl, beat butter and sugars until creamy. Add bananas; beat
until light and fluffy. Beat in eggs and vanilla. On low-speed, beat in
flour mixture. By hand stir in chocolate chips, coconut, pineapple and
nuts. Drop by rounded Tbsp., 2" apart onto ungreased cookie sheets. Bake
10-12 minutes or until cookies get brown around the edges. Cool cookies 2
minutes before removing to cooling racks.
Yield: 4 Dozen Cookies
