Heavenly Strawberry Delight

1 cup white wheat flour
1/2 cup butter or margarine
1/2 cup chopped walnuts -- (optional)
1/4 cup packed brown sugar
2 egg whites
2 teaspoons lemon juice
8 ounces Cool Whip -- thawed
10 ounces frozen strawberries -- thawed
Preheat oven to 350F.
Mix flour, butter, nuts, and brown sugar until crumbly and press into
baking pan. Bake for 20 to 25 minutes. Cool and break into crumbs. Set
aside.
Next, combine the egg whites, lemon juice, sugar, and strawberries in large
mixing bowl. Beat at medium speed for 15 to 20 minutes or until soft peaks
are formed. Fold Cool Whip into strawberry mixture. Put half of crumb
mixture into bottom of greased baking pan. Spread strawberry mixture over
crumbs and top with the remaining crumbs. Freeze!
Yields 9-inch cake.
NOTES : A lowfat, frozen strawberry-cream dessert that tastes just like ice
cream in a sweet walnut crust!

Heavenly Strawberry Dessert

STIR TOGETHER TO MIX:
3 ounces strawberry flavored gelatin
1 1/2 cups boiling water
2 teaspoons granulated white sugar
1 pinch salt
1 angel food cake
10 ounces fresh strawberries -- sliced
1/2 pint whipping cream
Stir gelatin into boiling water with sugar and pinch of salt. Refrigerate
until semi-set. Stir in strawberries and whipped cream. Cover cake with
mixture and chill until it finishes setting.
Variations:
Tear cake into approximately 1-inch pieces and stir into berry/cream
mixture. Pour in mold and chill.
Cut approximately 3/4 inch off top of cake. Hollow out cake and spoon in
berry/cream mixture. Replace top of cake.
Yields 10-inch tube cake.
NOTES : Angel food cake with a fresh strawberry, gelatin, whipped cream
topping.
Light, fruity and extremely easy to prepare.

Honey Of A Chicken

4 whole skinless, boneless chicken breasts
1/2 cup butter -- melted
2 tablespoons all-purpose flour
2 tablespoons prepared mustard
1/2 cup corn flake crumbs
1/2 cup yellow cornmeal
1/2 teaspoon salt
1/4 teaspoon paprika
Preheat oven to 350 degrees F.
Cut each chicken breast in half lengthwise.
Blend flour and mustard with butter until smooth.
Combine corn flake crumbs with cornmeal, salt and paprika; mix well.
Dip chicken in butter mixture and coat well with corn flake mixture. Place
on foil-lined baking pan and drizzle remaining butter mixture over top.
Bake for 40 minutes.
Use honey as a dip for chicken.

Honey-Mustard Sauce

2 tablespoons butter
2 tablespoons flour
1 cup white wine
1 cup buttermilk
3 tablespoons honey mustard
Salt and pepper
Put butter in top of double boiler. When butter is melted, add flour to
form a roux, then add wine, buttermilk and mustard. Stir until mixture
comes to desired consistency. If sauce is too thick, add a little milk (or
water). Season to taste.
Makes 2 cups.

Hot Colby Ham Sandwiches

1/2 cup butter -- melted
2 tablespoons prepared mustard
1 tablespoon poppy seeds
2 teaspoons sugar -- (2 to 3)
15 dinner rolls -- (about 3" in
diameter) sliced
15 slices Colby cheese -- (about 1 pound)
15 slices thin slices deli ham -- (about 1 pound)
2 cups shredded Mozzarella cheese -- (8 ounces)
In a small bowl, combine the butter, mustard, onion, poppy seeds and
sugar. Place roll bottoms, cut side up, in an ungreased 15x10x1" baking
pan. Top each with Colby cheese, ham and mozzarella cheese. Drizzle
with half of the butter mixture.
Replace roll tops. Drizzle with remaining butter mixture. Bake,
uncovered, at 350 F. for 10 to 15 minutes or until cheese is melted.
Yield: 15 servings.

NOTES : "This yummy recipe is a favorite with friends and family,"
assures Sherry. "Not only are the warm sandwiches easy to assemble,
but they smell so good when baking that no once can resist them.
They're a staple at our get-together."
Bobbie's Note: I used the ingredients from this recipes but adapted
it to use two large whole wheat Kaiser rolls. I use a fourth of the
butter mixture and just put the amount of ham and cheese on until it
looked right. They were really delicious! The buns were crunchy and
the cheese melted.
