* Exported from MasterCook * Denise Lemonetti's Antipasto Stuffed Strawberries Recipe By : Serving Size : 24 Preparation Time :0:00 Categories : Volume 7-04 Apr 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 24 large strawberries -- hulled 1/2 cup goat cheese 1 teaspoon chopped fresh mint 24 strips prosciutto -- 1/4 inch wide **VINAIGRETTE** 2 tablespoons olive oil 2 teaspoons balsamic vinegar 1 clove garlic -- pressed 1/4 teaspoon black pepper 1/4 teaspoon grated lemon peel **GARNISHES** Shredded spinach Lemon twists Black olives Use a small melon baller to scoop out the center of each strawberry halfway down. Combine the cheese and mint. Stuff each strawberry, then wrap each horizontally with a strip of prosciutto. Combine the ingredients for the vinaigrette. Arrange the strawberries on a spinach lined platter. Drizzle the vinaigrette over the top and garnish the platter with lemon twists and olives. Sift together the flour and soda; set aside. With an electric mixer, cream together the butter and the sugars. Beat in the eggs and vanilla. Add the peanut butter and beat until well mixed. Stir in the sifted ingredients. Add the pecans, chocolate chips, and peanut butter chips. Drop by teaspoonfuls onto greased baking sheets. Bake for about 12 minutes, or until cookies are lightly browned. Exchanges: 1/2 Grain(Starch); 1/2 Lean Meat; 1 Fat; 1/2 Other Carbohydrates. * Exported from MasterCook * Double Rich Chocolate Cookies Recipe By :Denise Warner Serving Size : 60 Preparation Time :0:00 Categories : Volume 7-04 Apr 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 cups all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup unsweetened cocoa powder 1 cup dark brown sugar -- packed 3/4 cup granulated sugar 1 cup butter -- no substitute 3 large eggs 2 teaspoons vanilla extract 12 ounces semisweet chocolate chips Optional: 1 cup chopped nuts* Preheat oven to 300 degrees F. In a medium bowl, combine flour, baking soda, salt and cocoa powder. Mix well with a wire whisk and set aside. In a large bowl, blend sugars with an electric mixer at medium speed. Add butter and beat to form a grainy paste. Scrape down sides of bowl, then add eggs and vanilla. Beat at medium speed until light and fluffy. Add the flour mixture and chocolate chips and blend at low speed just until combined. Do not over mix! Drop dough by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart. Bake for 18 to 22 minutes. Immediately transfer cookies to wire racks with a spatula. Yield: About 4 dozen. Recipe can be doubled. NOTES : Denise made them with coarsely chopped macadamia nuts. She put them together in the usual way (beat the butter, added the sugars, then the eggs & vanilla, then the flour mixture and finally stirred in the chips and nuts). Using a heaping teaspoon of dough, you should get about 5 dozen cookies.
