* Exported from MasterCook * Jamaican Garbanzo Bean & Corn Fritters Recipe By :Pappy Dave's, Fort Walton Beach FL Serving Size : 24 Preparation Time :0:00 Categories : Volume 7-03 Mar 2004 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 16 ounces garbanzo beans -- drained (1 can) 1/4 cup drained whole kernel corn 1/2 cup onions -- chopped fine 1/4 cup green onions -- chopped fine 1/4 cup red bell pepper -- chopped fine 2 teaspoons fresh minced cilantro 1 teaspoon granulated garlic 1 1/4 teaspoons ground cayenne pepper 1/4 teaspoon ground white pepper 1/4 teaspoon thyme 1 teaspoon salt 3 teaspoon Walkers Wood scotch bonnet hot sauce 2 eggs -- beaten 1 1/2 cups self rising flour Peanut oil for cooking Place drained garbanzo beans in a large bowl and mash into a paste. Mix all other ingredients in with the beans and mix until a thick batter is formed. Cover and place in refrigerator and allow to chill. Cook fritters in 350-degree-F. peanut oil at least 1 inch deep for two to three minutes or until golden brown. Remove from oil and drain on paper towels. (Leftover batter will keep for two or three days if covered and refrigerated.)
