Rice Salad (with currants)

1 cup brown rice
6 spring onions -- sliced
1/2 red pepper -- (sweet bell pepper)
1/2 green pepper
1/3 cup currants
60 grams cashews -- (about 2 ounces)
2 tablespoons pine nuts
3 tablespoons chopped parsley
**Dressing**
1/4 cup olive oil
2 tablespoons lemon juice
4 tablespoons soy sauce
1 garlic clove -- crushed
Salt and pepper
Cook the rice for 30 to 40 minutes in salted water; cool.
Add the onions, red pepper, green pepper, currants, cashews, pine nuts and
parsley.
Combine dressing ingredients in jar and shake.
Mix dressing into rice mixture.
Serves 3-4.
