Zucchini Parmesan Bread

3 cups flour
1 cup shredded zucchini
1/3 cup sugar
3 tablespoons grated parmesan cheese
5 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons salt
1/3 cup butter or margarine
1 cup buttermilk
2 eggs
2 tablespoons grated onion
Mix flour, zucchini, sugar, cheese, baking powder, soda and salt.
Melt butter; stir in buttermilk, eggs and onion until smooth.
Stir in flour mixture until mixed. Mixture may seem dry.
Spread in greased 9-inch loaf pan and bake in preheated 350 degree oven
for 55 to 60 minutes; or until toothpick inserted in center of bread
comes out clean and loaf pulls away from the sides of pan.
Cool in pan for 10 minutes, remove and cool thoroughly on rack.
If you have no buttermilk, measure 2 tablespoons vinegar into a cup
and add milk to make 1 cup.
Makes 1 loaf.
