* Exported from MasterCook * Tea Time Tasties (Small Tarts) Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 6-11 Nov 2003 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Pastry: 1 cup flour 3 ounces cream cheese 1/4 teaspoon salt 1/4 pound softened oleo -- (1 stick margarine) Filling: 2/3 cup sugar 2/3 cup chopped nuts 1/4 teaspoon salt 1 tablespoon melted butter 1 egg Blend the pastry ingredients as you would for pie crust. Refrigerate 1 hour. Make 1-inch ball and form into small tart pans. Mix the filling ingredients together and place in pastry with teaspoon. Bake at 400F. for 14 minutes. Heat olive oil in a medium pan, add leeks and sauté for 1 minute. Add ground turkey and sauté 6-8 minutes or until turkey is cooked through. Drain and remove to a bowl. Toss with the fresh basil. Fill each tartlet shell with the meat mixture and top with goat cheese. Quarter each cherry tomato and place on top of each tartlet in a pinwheel design. Place tartlets on baking sheet and bake 5 minutes. Serve warm. Exchanges: 1 1/2 Vegetable; 1/2 Fat. * Exported from MasterCook * Turkey Tacos aka Chicken Wraps Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Volume 6-11 Nov 2003 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup water 1 tablespoon peanut butter [I use a heaping spoon as I love PB] 1 tablespoon soy sauce 1 1/2 tablespoons honey 1/4 teaspoon crushed red pepper flakes -- optional [but a little kick is nice] 2 cups shredded turkey -- (or thinly sliced) or chicken -- (2 to 3 cups) Some salsa [you can use bottled or make your own] 1 peeled and sliced avocado -- (1 or 2) Flour tortillas -- (I use the big ones) Put into a pan and heat to boiling the water, peanut butter, soy sauce, honey and the red pepper flakes. Add the meat and cook until warm. Put 2-4 tablespoons of drained turkey on a flour taco, add some salsa and sliced avocado; wrap and enjoy one of the finest tacos you have ever had. You have to be a bit careful with the liquid from the meat and the salsa they can be a bit sloppy but they are worth the mess. It's really worth it to make your own fresh salsa but if you don't have the time use bottled. This is a fantastic way to use up leftover turkey. You can use shredded chicken also. You can really use as much turkey as you want (within reason) 1-3 cups. There is plenty of the peanut sauce it just helps to warm up the meat and gives it a hint of peanut flavor.
